Main Ingredients- 100g fresh chives
- 2 fresh eggs
- 360g Korean pancake mix (buchim garu)
- 180ml cold water
- 2.5 Tbsp gochujang (Korean chili paste)
- Ample cooking oil
Cooking Instructions
Step 1
First, wash the fresh chives thoroughly under running water to remove any dirt or debris. Gently shake off excess water, then finely chop them into approximately 0.5cm pieces. Chopping them thinly ensures a better texture when cooked; aim for a minced consistency.
Step 2
Prepare a large, deep bowl. Add all the cleaned and chopped chives to the bowl, followed by 360g of the Korean pancake mix. Adding the pancake mix first helps in evenly coating the chives and prevents the batter from clumping.
Step 3
Next, pour in 180ml of cold water to form the batter. The amount of water might vary slightly depending on the type of pancake mix or the moisture content of the chives, so adjust as needed to achieve your desired batter consistency. Too thin, and it will be difficult to pan-fry; too thick, and it may turn out dry.
Step 4
Crack 2 fresh eggs into the batter. Adding eggs will make the pancake mix softer and add a richer, savory flavor.
Step 5
Add about 2.5 tablespoons of gochujang for a sweet and spicy kick. The amount can be adjusted to your preference. Gochujang is key to achieving the unique savory taste of jangtteok.
Step 6
Using a spatula or spoon, stir the ingredients well until everything is evenly combined. It’s important to mix thoroughly so there are no lumps of chives, pancake mix, water, eggs, or gochujang. Ensure a smooth, homogenous batter.
Step 7
Heat a frying pan over medium heat and add a generous amount of cooking oil. Sufficient oil is crucial for frying the chive pancakes until golden brown and delicious without burning. You can also use a paper towel to spread the oil evenly across the pan.
Step 8
Once the pan is hot, scoop the batter onto the pan using a spoon, forming your desired size and shape (e.g., round pancakes or small patties). Fry for about 2-3 minutes per side, until golden brown and cooked through. Enjoy your delicious Buchu Jangtteok, crispy on the outside and tender on the inside!
