Main Ingredients- 1 cucumber (approx. 200g)
- 1/2 onion (approx. 50g)
- A pinch of salt (for salting the cucumber)
Seasoning- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp vinegar
- 1 Tbsp sugar
- 1 Tbsp maesilcheong (plum extract)
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp vinegar
- 1 Tbsp sugar
- 1 Tbsp maesilcheong (plum extract)
- 1 Tbsp toasted sesame seeds
- 1 Tbsp sesame oil
Cooking Instructions

01. Prepare and Slice Ingredients: Prepare one fresh cucumber and half an onion. Wash the cucumber thoroughly, cut it in half lengthwise, and then slice it into approximately 1cm thick half-moon shapes. You can use a mandoline slicer, but slicing them slightly thicker will help maintain a crunchy texture, preventing them from becoming mushy.

Slice the cucumber into half-moons: After peeling the cucumber, cut it in half and then slice it into about 1cm thick pieces. Slicing them a bit thicker ensures they don’t get crushed when tossed and keeps them crunchy.

Thinly slice the onion: Thinly slice half an onion. Slicing it this way will allow the onion to resemble shredded strands when mixed with the cucumber, enhancing its sweetness and flavor. Avoid slicing too thickly, as it might not cook evenly. Thin slicing is key!
