Main Ingredients

  • Pork shoulder (front leg) 600g (serves 3-4)
  • Onion 1/2
  • Green onions 2 stalks
  • Sugar 1.5 Tbsp
  • Sesame oil, to taste
  • Toasted sesame seeds, to taste

Sauce Ingredients

  • Gochujang (Korean chili paste) 1.5 Tbsp
  • Soy sauce 3 Tbsp
  • Gochugaru (Korean chili flakes) 1.5 Tbsp
  • Cooking wine (Mirin or similar) 1 Tbsp
  • Minced garlic 1 Tbsp

Cooking Instructions

Step 1

Before you begin cooking, prepare your vegetables. Thinly slice the onion and cut the green onions diagonally. Having your vegetables prepped will make the cooking process much smoother.

We’re using 600g of pork shoulder (front leg) for our main ingredient today. This amount is sufficient for 3 to 4 servings. Pork shoulder has a good balance of lean meat and fat, making it tender and flavorful when stir-fried.

Now it’s time to make the star sauce for the delicious Jeyuk Bokkeum. In a bowl, combine 1.5 Tbsp gochujang, 3 Tbsp soy sauce, 1.5 Tbsp gochugaru, 1 Tbsp cooking wine, and 1 Tbsp minced garlic. Mix them well until smooth. Pre-mixing the sauce makes it convenient to add directly in the next step.

Heat a pan and add the pork shoulder. Begin to stir-fry. If the pork pieces are thick, I recommend seasoning them with a little salt and pepper to remove any gamey odors and enhance the flavor as they cook. Stir-fry over medium heat until the surface of the pork is cooked.

Once the pork is partially cooked, add 1.5 Tbsp of sugar for sweetness. Increase the heat to high and quickly stir-fry to incorporate the sugar with the meat. This step will give the pork a nice sheen and add umami.

Now, add the pre-made sauce and the sliced green onions to the pan, stir-frying everything together. Mix well to ensure the sauce coats the meat and vegetables evenly.

Next, add the prepared onions and continue to stir-fry. Cook until the onions become translucent and release their sweetness, ensuring they are well mixed with the pork and sauce.

Once all ingredients are combined, let it simmer a bit longer for the sauce to fully penetrate the meat and vegetables. Simmer over low heat for about 2-3 minutes to develop a deeper flavor.

When the sauce has well coated the meat, turn off the heat. Finish by drizzling a suitable amount of sesame oil and sprinkling toasted sesame seeds. Adding sesame oil after turning off the heat preserves its fragrant aroma.
