Main Ingredients

  • Pork spare ribs 1.5kg (approx. 3.3 lbs)
  • 1 Onion

Cooking Instructions

Step 1

Select high-quality pork spare ribs from your trusted butcher. About 1.5kg (3.3 lbs) will be plenty for a family meal.

Step 1

Step 2

Soak the pork ribs in cold water for about 30 minutes to remove any excess blood. Rinse them thoroughly afterward. This step is crucial for minimizing any gamey odor and ensuring a clean taste.

Step 2

Step 3

Bring a pot of water to a rolling boil. Add the pork ribs and blanch them for about 3-5 minutes, just until the exterior looks slightly cooked. Skim off any scum or impurities that rise to the surface; this is key to achieving a clean and delicious result. See that foamy residue floating?

Step 3

Step 4

After blanching, carefully rinse each rib under cool running water to remove any remaining impurities. Make sure to clean between the bones as well for a pristine finish.

Step 4

Step 5

Arrange the cleaned pork ribs neatly in a pot. It’s now time to prepare the flavorful sauce that will make these ribs irresistible!

Step 5

Step 6

In a bowl, combine all the sauce ingredients: 1 chopped onion, 2 packs of apple juice, 5 Tbsp BBQ sauce, 3 Tbsp steak sauce, 2 Tbsp oyster sauce, 2 Tbsp soy sauce for simmering, 2 Tbsp oligodang, 2 Tbsp minced garlic, a pinch of black pepper, and a pinch of parsley flakes. Whisk everything together until well combined. (Measurements are based on a standard Korean ‘dad-spoon’ or large tablespoon.) *Tip: If you don’t have apple juice, you can use blended fresh apple or other fruit juices. If using water instead of fruit juice, you may want to add a little extra sweetener like sugar or oligodang to achieve the desired sweetness.

Step 6

Step 7

Place the pork ribs in the pot and pour about two-thirds of the prepared sauce over them. Bring to a boil over high heat. Once boiling, reduce the heat to medium and cook, stirring occasionally, to ensure the ribs are evenly coated and the sauce penetrates the meat. The aroma will start to fill your kitchen soon!

Step 7

Step 8

Let the ribs simmer over medium heat for about 30 minutes. The sauce will thicken, and the flavors will meld beautifully with the meat. Taste the sauce and add the remaining sauce if needed. If the sauce starts to stick to the bottom or seems too thick, add a tiny bit of water to adjust the consistency.

Step 8

Step 9

The ribs are ready when the meat is tender and easily separates from the bone, and the sauce has reduced to a glossy glaze that clings to the ribs. Just look at that appetizing shine!

Step 9

Step 10

While soy-sauce based braised ribs are delicious, making them in this spicy and sweet ‘Pork Ribs’ style for your family creates an even more special dining experience. Seeing your loved ones enjoy every bite is the greatest happiness. Making pork ribs like these is easier than you might think! Use this ‘golden recipe’ for the pork ribs sauce to create a fantastic BBQ dish at home. Enjoy!
