This is a ‘Jeyuk Bokkeum’ (spicy stir-fried pork) that you’ll crave regularly! Made with thinly sliced pork belly, it absorbs the sauce beautifully, resulting in an incredibly tender and flavorful dish. Enjoy this simple yet delicious Daepae Jeyuk Bokkeum, perfect for any meal.
Main Ingredients- Thinly Sliced Pork Belly (Daepae Samgyeopsal) 700g: The thin slices cook quickly and absorb the sauce wonderfully, making this dish extra tender.
- Green Onion 1/2 stalk: Slice thinly for aroma or julienne for texture.
- Onion 1 medium: Cut into large chunks to add sweetness and depth.
Sauce Ingredients- Gochugaru (Korean chili flakes) 3 Tbsp: The base for spiciness! Adjust to your preference.
- Gochujang (Korean chili paste) 2 Tbsp: Adds a deep, rich spiciness.
- Soy Sauce 5 Tbsp: For overall seasoning and umami.
- Minced Garlic 1 Tbsp: Enhances flavor with its pungent aroma.
- Maesil Extract (Plum Syrup) 1 Tbsp: Adds a subtle sweetness and helps neutralize any pork odors.
- Mirin (or cooking wine) 2 Tbsp: Effectively removes any gamey smell from the pork and helps tenderize it.
- Gochugaru (Korean chili flakes) 3 Tbsp: The base for spiciness! Adjust to your preference.

Cooking Instructions
Step 1
First, prepare 700g of thinly sliced pork belly (Daepae Samgyeopsal). If it’s frozen, let it thaw slightly for easier cooking.

Thinly slice or julienne the green onion. Cut the onion into large, roughly 1cm thick pieces. The vegetables will shrink when cooked, so don’t worry about slicing them too thinly.
Step 3
In a large bowl, combine the gochugaru (3 Tbsp), gochujang (2 Tbsp), soy sauce (5 Tbsp), minced garlic (1 Tbsp), maesil extract (1 Tbsp), and mirin (2 Tbsp). Mix well with a spoon to create the delicious sauce. It will already smell amazing!

Now, let’s start stir-frying. Heat a wok or pan over high heat. Add all the prepared thinly sliced pork belly and gently separate the slices as they cook. Stir-frying over high heat quickly will help seal in the juices.

As the pork starts to cook, add 1 Tbsp of sugar. This helps the sauce to really penetrate and adhere to the meat, enhancing its savory flavor.

You’ll notice some liquid and fat rendering from the pork belly as it cooks. Tilt the pan and drain this excess liquid and fat for a cleaner, less greasy final dish. (You can also gently blot with paper towels.)

Once the pork belly is almost fully cooked, add the sliced green onions and onions to the pan. Stir-fry everything together, being careful not to burn the vegetables.

Keep the heat on high and stir-fry quickly until the vegetables soften and the sauce evenly coats the meat and vegetables. It’s important to maintain high heat to prevent excess liquid from forming. Shaking the wok or pan can help with even cooking.
Step 9
When the delicious sauce has nicely coated everything, add the oligosaccharide (2 Tbsp) for a glossy finish and mild sweetness, along with the sesame seeds (1 Tbsp). Give it a quick final stir-fry. Be careful not to overcook, as it can burn.
Step 10
Turn off the heat. Now is the time to add a generous pinch of black pepper to boost the aroma, and finally, drizzle in the sesame oil (2 Tbsp) for a rich, nutty finish. Your flavorful Daepae Jeyuk Bokkeum is ready!
