How to Make a Delicious Pickled Radish Salad with a Refreshing Crunch

I made a fantastic pickled radish salad (Mujangajji Muchim) using the pickled radishes I prepared in the fall. It’s a perfect side dish for when you don’t have much of an appetite, making you want to finish a whole bowl of rice!

Main Ingredients
  • Pickled Radish (Mujangajji) – 1 bowl

Seasoning
  • Gochugaru (Korean chili flakes) – 1 Tbsp
  • Scallions – 2 stalks
  • Sesame oil – 1 Tbsp
  • Minced garlic – 1 Tbsp
  • Sugar – 1/2 Tbsp
  • Toasted sesame seeds – a pinch (optional)

Cooking Instructions

Step 1

First, prepare your pickled radish (Mujangajji). This particular Mujangajji was made by salting radishes during kimchi season, drying them until chewy, and then preserving them in gochujang (red chili paste). It has a deep flavor and a satisfyingly chewy texture.

Step 2

Rinse the prepared Mujangajji thoroughly under running water. If it’s too salty for your taste, soak it in cold water for about 10-15 minutes to adjust the saltiness. Once the saltiness is to your liking, thinly slice the Mujangajji into fine shreds. It’s crucial to drain the shredded radish well in a sieve to ensure the seasoning adheres properly and doesn’t become watery.

Step 3

In a bowl with the drained Mujangajji, add all the seasoning ingredients. This includes gochugaru, minced garlic, finely chopped scallions, sesame oil, and sugar. Gently toss everything together with your hands (‘jorm-jorm’) until the seasoning is evenly distributed. Be sure to mix gently so the radish doesn’t become mushy. Sprinkling some toasted sesame seeds at this stage will add a lovely nutty aroma and flavor.

Step 4

And just like that, in a flash! Your delicious ‘Mujangajji Muchim’ is ready. It has a clean aftertaste and bursts with savory flavor, truly a rice-stealing dish!
