Easy Homemade Spicy & Sweet Marinated Duck Bulgogi Recipe

Main Ingredients
- Sliced duck meat 800g
- Onion 200g (approx. 1/2 medium)
- Green onion 1/2 stalk (mostly white part)
- Chives 70g (a bunch)
- Enoki mushrooms 1 pack (160g)
- Toasted sesame seeds, a pinch (for garnish)
Duck Marinating Ingredients
- Cooking wine (Mirin or Sake) 3 Tbsp
- Plum extract 1 Tbsp
- Minced garlic 1/2 Tbsp
- Ginger powder, a pinch (or 1/4 tsp grated ginger)
- Black pepper, a pinch
Spicy & Sweet Sauce Ingredients
- Gochugaru (Korean chili flakes) 4 Tbsp
- Gochujang (Korean chili paste) 3 Tbsp
- Soy sauce 2 Tbsp
- Oligosaccharide 2 Tbsp (adjust sweetness to taste)
- Sugar 1 Tbsp
- Oyster sauce 1 Tbsp
- Minced garlic 1 Tbsp
- Minced green onion 1/2 stalk (white part)
- Sesame oil 1 Tbsp
- Black pepper, a pinch

Cooking Instructions
Step 1
If your duck meat is already sliced, use it as is. If it’s a whole piece, slice it thinly. Patting the meat with a paper towel to remove excess moisture can improve the texture.
Step 2
In a large bowl, place the sliced duck meat. Add the marinating ingredients: 3 Tbsp cooking wine, 1 Tbsp plum extract, 1/2 Tbsp minced garlic, a pinch of ginger powder, and a pinch of black pepper. Gently mix and massage the marinade into the duck for about 10 minutes. This step helps tenderize the meat and remove any gamey odors.
Step 3
Prepare the vegetables. Trim the base of the enoki mushrooms and separate them into strands. Slice the green onion into bite-sized pieces. Cut the onion into thick julienne strips. Chop the chives into about 4cm lengths. (Tip: Finely mincing the white part of the green onion and adding it to the sauce will enhance its flavor.)
Step 4
In a small bowl, combine all the sauce ingredients. Mix well: 4 Tbsp gochugaru, 3 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp oligosaccharide, 1 Tbsp sugar, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, the minced white part of the green onion, 1 Tbsp sesame oil, and a pinch of black pepper. Whisk until smooth to create your delicious sauce.
Step 5
Pour the prepared sauce mixture over the marinated duck meat.
Step 6
Using your hands, gently toss and mix the duck meat with the sauce until every piece is evenly coated. Ensure the marinade clings well to the duck.
Step 7
Heat a pan or griddle over medium heat. Add the marinated duck and the roughly chopped green onion first. Stir-fry until the duck meat starts to cook and render its fat.
Step 8
Once the duck is partially cooked and you can flip it, add the julienned onion, chopped chives, and separated enoki mushrooms to the pan. Continue to stir-fry until the vegetables are tender and the duck is fully cooked through. Stir occasionally to prevent sticking.
Step 9
When all ingredients are cooked and well combined, turn off the heat. Sprinkle a pinch of toasted sesame seeds over the dish for garnish. Your delicious Spicy & Sweet Marinated Duck Bulgogi is ready! Serve hot with steamed rice for a complete meal.
