Spicy & Sweet Kongbul (Pork & Bean Sprout Stir-fry)

Main Ingredients
  • 1 bag of bean sprouts (approx. 300g)
  • 400g thinly sliced pork for bulgogi
  • 1 stalk of green onion
  • 1/2 medium onion

Seasoning
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp soy sauce
  • 2 Tbsp minced garlic
  • 1 Tbsp sugar
  • 1/2 cup water (100ml)

Cooking Instructions

Step 1

First, rinse the bean sprouts under running water and drain them. Finely chop the onion and cut the green onion into 5cm pieces. Slice the pork into approximately 5cm bite-sized pieces if not already sliced.

Step 2

Layer the prepared ingredients in a large pan or pot. Start with the bean sprouts, then add the pork, followed by the onion and green onion. Layering helps the seasoning to distribute evenly.

Step 3

Now, add all the seasoning ingredients (gochugaru, soy sauce, minced garlic, and sugar) evenly over the layered ingredients.

Step 4

Pour in 1/2 cup (100ml) of water. The water should just about cover the pork. As the bean sprouts cook, they will release moisture, so the initial amount of water might seem low. If the sauce reduces too much during cooking, you can add a little more water later.

Step 5

Place the pan over medium heat. Once it begins to simmer, gently stir and loosen the pork at the bottom. This prevents the pork from clumping and ensures it cooks evenly with the sauce.

Step 6

Cook for about 8 minutes over medium heat, stirring occasionally. The bean sprouts should be tender-crisp, and the pork should be cooked through and tender. Taste and adjust seasoning if needed – add a touch more soy sauce for saltiness or sugar for sweetness. Serve hot over rice for a delicious meal!
