  • 1/4 head of well-fermented kimchi (generous amount)
  • 200g somyeon noodles (serves 1-2)

Bring a generous amount of water to a rolling boil in a pot over high heat. Using plenty of water prevents the noodles from sticking together and ensures a better texture.

Before adding the somyeon noodles to the boiling water, gently loosen them. If they are clumped together, they may not cook evenly.

Once the water is boiling vigorously, add the prepared somyeon noodles. Use chopsticks or a fork to gently stir them as they cook for about 3-4 minutes. Cook until the noodles are chewy and perfectly al dente. Keep a close eye on the cooking time.

Immediately after cooking, drain the noodles and rinse them thoroughly under cold running water. This crucial step removes excess starch, resulting in a wonderfully springy and chewy noodle texture. Drain them completely in a colander.

Place the well-drained, chewy somyeon noodles into a large mixing bowl.

Finely chop the kimchi into bite-sized pieces. Avoid chopping it too coarsely, as this will help the seasoning penetrate better.

Add the freshly chopped kimchi generously on top of the noodles in the bowl. The fresh, crunchy kimchi plays a vital role in defining the delicious flavor of the bibim guksu.

Now, sprinkle the remaining seasoning ingredients (gochugaru, sugar, soy sauce, sesame oil, and sesame seeds) over the kimchi. These will add depth and aroma to your dish. Remember to adjust the amount of seasoning based on the existing saltiness and flavor of your kimchi.

With all the ingredients in the bowl, gently toss everything together using your hands or chopsticks until well combined. Mix carefully to avoid breaking the noodles. The key here is that the kimchi is already seasoned, so this step primarily balances the flavors with a small amount of added seasoning. If you prefer a bolder taste, you can optionally add a little bit of gochujang (red chili paste) instead of soy sauce for a different flavor profile.
