This is a spicy and sweet Gochujang tuna stir-fry made using sprouted potatoes that might have otherwise been discarded. It’s a perfect, hearty meal for a simple solo lunch or a quick weeknight dinner. Serve it over warm rice and mix it all together for an appetite-boosting dish! Using the tuna oil adds an extra layer of rich flavor.

Main Ingredients
  • 1 can (150g) Tuna (use all the oil)
  • 1 small Potato
  • 1/2 size of Potato for Carrot
  • 1 small Onion

Cooking Instructions

Step 1

First, peel the small potato and cut it into chunky, 1.5cm cubes. Be careful not to cut them too small, or they might break apart while cooking. Dice the carrot into roughly half the volume of the potato, cutting it into chunky cubes similar in size to the potato. Next, dice the small onion into similar-sized pieces.

Step 2

Place the cubed potato and carrot into a pot or deep pan. Pour in 1 cup (200ml) of dried anchovy-kelp broth. The broth should mostly cover the ingredients.

Step 3

Add the seasoning ingredients, 1.5 Tbsp of Gochugaru and 1 Tbsp of Gochujang, to the pot with the vegetables. Mix thoroughly to ensure the paste and flakes are evenly distributed without lumps.

Step 4

Bring the mixture to a rolling boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10 minutes, or until the potatoes are tender. You can test for doneness by inserting a chopstick; it should go in easily.

Step 5

Once the potatoes are cooked, add the entire can of tuna (150g), including the oil, to the pot. Let it simmer for a little longer. The tuna oil will blend with the sauce, adding a deeper, savory flavor.

Step 6

Add the diced onion to the pot. Stir in 0.5 Tbsp of plum syrup and 0.5 Tbsp of Oligodang for a touch of sweetness. Cook for about 2-3 more minutes, stirring occasionally, until the onions become translucent and everything is well combined.

Step 7

Finally, add the 2 finely chopped Cheongyang peppers for a spicy kick, and sprinkle 1 Tbsp of toasted sesame seeds for a nutty aroma. Mix everything together well and turn off the heat immediately. Avoid overcooking, as the vegetables can become mushy. Serve the finished Gochujang Tuna with Vegetables generously over warm rice and enjoy mixing it all together!
