Spicy-Sweet Gochujang Tuna Perilla Wraps
Perilla Wraps Topped with Generous Spicy Gochujang Tuna Stir-fry
As a working couple, we prefer simple dinners. This recipe is highly recommended for a weeknight meal as both ingredient preparation and cooking steps are straightforward. 🙂
Perilla Wrap Ingredients- 2 bowls cooked rice
- 10 perilla leaves
- 100g canned tuna, drained
- 1/4 onion, finely chopped
- 2 Cheongyang peppers, finely chopped (adjust spice level)
- Green onion, to taste, finely chopped
- Sesame oil, to taste
Spicy-Sweet Seasoning- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Soy sauce
- 1/2 Tbsp Maesilcheong (plum extract)
- 1/2 Tbsp Oligodang (corn syrup)
- 1 Tbsp Minced garlic
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Soy sauce
- 1/2 Tbsp Maesilcheong (plum extract)
- 1/2 Tbsp Oligodang (corn syrup)
- 1 Tbsp Minced garlic
Cooking Instructions
Step 1
First, wash the fresh perilla leaves thoroughly under running water. Blanch them in boiling water for about 15-20 seconds. Be careful not to over-blanch, as they can become mushy. Rinse the blanched leaves in cold water and gently squeeze out all excess water. This step makes the leaves tender and preserves their aroma.
Step 2
Now, heat a pan over medium-low heat. Add a little oil from the canned tuna, or a drizzle of sesame oil for extra fragrance.
Step 3
Add the finely chopped onion and green onion to the pan. Sauté them in the tuna oil (or sesame oil) until the onions become translucent and fragrant. Sautéing the onions until they are lightly golden brown will enhance the flavor.
Step 4
Once the onions are sautéed, add the drained tuna and the pre-mixed spicy-sweet seasoning (Gochujang, Gochugaru, soy sauce, plum extract, corn syrup, minced garlic). Stir everything together well and cook until the seasoning coats the tuna evenly.
Step 5
When the seasoning is well combined with the tuna, add the finely chopped Cheongyang peppers and stir-fry briefly until their spicy aroma is released. The spiciness of the peppers cuts through richness and adds a delightful kick.
Step 6
Your delicious Gochujang tuna stir-fry for the perilla wraps is now ready! Let it cool slightly.
Step 7
In a bowl with the warm rice, add about 1/2 Tbsp of sesame oil. Gently mix the rice with a spoon or your hands, ensuring it’s fluffy and not clumped. The sesame oil will infuse the rice with a lovely aroma.
Step 8
Take a portion of the seasoned rice and shape it into a compact ball on your palm. Lightly wetting your hands with water or oil can prevent the rice from sticking. Place the rice ball onto a prepared perilla leaf, gather the edges of the leaf, and wrap it neatly.

Finally, generously top each wrapped perilla ssam with the prepared spicy Gochujang tuna stir-fry. Your simple yet incredibly flavorful perilla tuna wraps are complete! Enjoy them while they are warm.
