Main Stew Ingredients

  • 100g pork shoulder or neck, cut into bite-sized pieces

  • 1 broth pack (or anchovy-kelp broth)
  • 2 Tbsp Gochujang (Korean red chili paste)
  • 2 tsp Gochugaru (Korean red chili flakes)
  • 1/2 tsp minced garlic
  • 1 tsp soup soy sauce (Gukganjang)
  • 1/2 tsp sugar (or 1 tsp, adjust sweetness)
  • 1/2 tsp MSG/flavor enhancer (like Dasida), optional

Cooking Instructions

First, pour 400ml of water into a pot and add 1 broth pack. Bring to a boil over high heat, then reduce to medium heat and simmer for about 5 minutes to create a flavorful broth.

Remove the broth pack from the steeped broth. Add the prepared potatoes and onions to the pot. Potatoes take longer to cook, so it’s best to add them first. (Tip: Dicing the potatoes helps them cook faster and also breaks down to thicken the stew.)

Add the key seasonings to the pot: 2 Tbsp Gochujang, 2 tsp Gochugaru, 1 tsp soup soy sauce, 1/2 tsp sugar, and 1/2 tsp of an optional flavor enhancer like Dasida. Stir well to dissolve. This step forms the foundation of the stew’s rich flavor.

Add the bite-sized pork pieces (shoulder or neck) to the pot. The pork will release its savory juices, enriching the broth as it cooks.
