  • 3 drizzles of sesame oil (adjust to taste)

The star of today’s dish is this dried shredded squid. It has a different charm and color compared to the jinmichae we commonly know. With one bag (about 300g), you can quickly make two versions of seasoned dried shredded squid at the same time.

First, prepare the dried shredded squid into bite-sized pieces. Cut them with scissors into lengths of about one or two finger joints. If they are clumped together, gently pull them apart with your hands. This helps the seasoning to be evenly distributed, making them taste even better.

The dried shredded squid is now prepared to a nice length. Tearing them so they don’t stick together and are of a suitable length ensures they won’t clump when seasoned and will look beautiful.

Now it’s time to lightly season the dried shredded squid. Drizzle about three drizzles of sesame oil over the prepared squid. (You can adjust the amount according to your preference.) Divide the sesame oil-seasoned dried shredded squid into two bowls. About 1/3 will be for the plain seasoned version, and the remaining 2/3 will be for the spicy and sweet gochujang version. First, let’s make the simplest one: the plain seasoned dried shredded squid. Since it’s already seasoned with sesame oil, you don’t need to add more. The key to this version is adding ‘sweetness’. The dried shredded squid itself has some saltiness, so we won’t add salt, soy sauce, or fish sauce; we’ll only add sweetness. Add 1 tablespoon of sugar, sprinkle some toasted sesame seeds, and gently mix again. It’s done! Isn’t this a super-speed recipe?

Now for the spicy and sweet gochujang version. To the divided dried shredded squid, add 2 tablespoons of gochujang and 1 tablespoon of honey or corn syrup for a smooth sweetness and shine.
