I couldn’t resist grabbing some pork bulgogi on sale when I visited a new neighborhood mart! This recipe involves marinating the pork in a savory gochujang (Korean chili paste) and soy sauce mixture. Once marinated, you can portion and freeze it. This makes it incredibly easy to whip up a delicious side dish or main course whenever you need one. Main Ingredients- 800g Pork Bulgogi slices (thinly sliced cut)
- A little minced Cheongyang chili pepper (optional, for extra spiciness)
Spicy & Sweet Marinade- 2 Tbsp chopped green onions
- 1.5 Tbsp Gochujang (Korean chili paste)
- 4 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Maesil Cheong (plum syrup/extract, for sweetness and tenderizing)
- 5 Tbsp Soy Sauce
- 2 Tbsp Mirin (or cooking sake, to remove gaminess and add flavor)
- 1/3 tsp Ginger powder (or 1/2 tsp minced fresh ginger)
- Pinch of Black Pepper
- 2 Tbsp Minced Garlic
- 2 Tbsp chopped green onions
- 1.5 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, prepare the pork bulgogi slices for cooking. If there’s excess blood, gently pat it dry with paper towels. This helps the marinade adhere better to the meat.

Wash and thoroughly dry the green onions. Finely chop about 2 tablespoons’ worth. These can be used as a garnish or mixed into the marinade.

Now, let’s make the delicious marinade! In a bowl, combine 1.5 Tbsp Gochujang, 4 Tbsp Gochugaru, 4 Tbsp Maesil Cheong, 5 Tbsp Soy Sauce, 2 Tbsp Mirin, 2 Tbsp Minced Garlic, 1/3 tsp Ginger powder, and a pinch of Black Pepper. Mix everything well until you have a smooth, uniform sauce.

Pour the prepared marinade over the pork slices. Use your hands to gently massage the marinade into the meat, ensuring every piece is coated. Cover the bowl with plastic wrap or transfer it to an airtight container, and let it marinate in the refrigerator for at least 30 minutes. The longer it marinates, the deeper the flavor will be.

Heat a pan over medium-high heat. Spread the marinated pork evenly in the pan. Avoid overcrowding the pan, as this will steam the meat instead of searing it. Spread the pork in a single layer as it cooks and releases its juices. Be mindful not to burn the marinade.
