Spicy & Sweet Gochujang Marinade
  • Gochujang (Korean chili paste): 3 Tbsp
  • Minced Garlic: 1.5 Tbsp
  • Soy Sauce: 1 Tbsp
  • Honey: 3 Tbsp (or corn syrup/rice syrup)
  • Cheongju (or Mirin/rice wine): 3 Tbsp
  • Ginger Powder: 0.3 tsp (or a dash of ginger juice)

Cooking Instructions

Step 1

First, let’s prepare the special gochujang marinade for our delicious pork belly. In a bowl, combine 3 tablespoons of gochujang, 1.5 tablespoons of minced garlic, 1 tablespoon of soy sauce, 3 tablespoons of honey, 3 tablespoons of cheongju (or mirin), and 0.3 teaspoons of ginger powder. Mix them well until there are no lumps. You can substitute honey with corn syrup or rice syrup, and if you don’t have ginger powder, a tiny bit of fresh ginger juice will work. This step creates a rich and flavorful gochujang sauce.

Step 2

Next, arrange the pork belly slices evenly in your air fryer basket. Sprinkle herb salt on just one side of the pork belly to season it lightly. You can adjust the amount of salt to your preference. Once the air fryer is preheated, place the pork belly inside and grill at 170°C (340°F) for 10 minutes. This initial grilling helps to seal in the juices, making the pork belly extra tender.

Step 3

After 10 minutes, carefully flip the pork belly slices over. Lightly sprinkle herb salt on the other side as well. Continue to grill at the same temperature of 170°C (340°F) for another 5 minutes. This brief grilling on both sides ensures the marinade will adhere well and results in a more delicious outcome.

Step 4

Now, generously brush the prepared gochujang marinade all over the lightly grilled pork belly. After coating evenly, increase the air fryer temperature to 180°C (355°F) and grill for an additional 3 minutes. After 3 minutes, flip the pork belly one more time, apply a thin layer of the marinade, and grill for another 3 minutes to finish. This will create a beautifully glazed and flavorful gochujang pork belly. Keep in mind that cooking times and temperatures may vary slightly depending on your specific air fryer model, so it’s always a good idea to check and adjust as needed. Remember to flip the pork belly midway through to ensure even cooking and prevent burning of the sauce on the bottom.
