  • 1 Onion (medium size)
  • 1 Green Onion (focus on the white parts)

Soak the Onion: Thinly slice the onion and soak it in cold water for about 10 minutes to remove its sharp, pungent flavor. This will bring out the onion’s natural sweetness and make its texture softer when grilled.

Make the Spicy & Sweet Gochujang Sauce: In a bowl, combine 2 Tbsp Gochujang, 2 Tbsp Soy Sauce, 2 Tbsp Gochugaru, 2 Tbsp Mirin, 1 Tbsp Oyster Sauce, 1 Tbsp Minced Garlic, 1 Tbsp Ginger Syrup, and 1/2 tsp Black Pepper. Whisk until smooth, ensuring no lumps remain. (Adjust the amount of Gochugaru to your preferred spice level.)

The Secret to Odor Removal: Curry Powder: Add 1/2 tsp of Curry Powder to the gochujang sauce. Curry powder effectively neutralizes any gamey odor from the pork belly, resulting in a cleaner taste. Mix all sauce ingredients thoroughly until well combined.

If covered for too long, too much moisture will release, hindering the grilling effect. After 5 minutes, remove the lid and continue to cook, allowing the sauce to caramelize and the pork belly to brown nicely. Flip the pieces occasionally for even cooking.
