I always tend to keep pork belly stocked at home, and one day, instead of just grilling it as usual, I wanted to try something spicy! So, I’ve brought you a delicious recipe for spicy gochujang pork belly:D
Main Ingredients

Seasoning Sauce
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Minced garlic 1 Tbsp
- Maesilcheong (Korean plum extract) 1 Tbsp
- Mirin (or cooking wine) 2 Tbsp
- Soy sauce 1 Tbsp
- Sugar 0.5 Tbsp
- Sesame oil 0.5 Tbsp
- Black pepper to taste

Cooking Instructions
Step 1
Let’s make delicious Gochujang Pork Belly, a dish that’s perfect for enjoying at home and pairs wonderfully with drinks! This recipe infuses the rich flavor of pork belly with a perfectly balanced spicy and sweet gochujang sauce.
Step 2
First, prepare the flavorful seasoning sauce that will make this Gochujang Pork Belly so special. In a bowl, combine 1 Tbsp of Gochujang, 1 Tbsp of Gochugaru, 1 Tbsp of minced garlic, 1 Tbsp of Maesilcheong, 2 Tbsp of Mirin, 1 Tbsp of soy sauce, 0.5 Tbsp of sugar, 0.5 Tbsp of sesame oil, and a pinch of black pepper. Mix everything thoroughly with a spoon until well combined. (All measurements are based on a standard Korean tablespoon.)
Step 3
Take your 500g of pork belly and generously coat both sides with the prepared gochujang sauce. Make sure to spread the sauce evenly and thoroughly to ensure every piece is well-seasoned.
Step 4
For even better flavor, let the marinated pork belly rest in the refrigerator for about 30 minutes to 1 hour. This marination period allows the flavors to penetrate deeply into the meat, enhancing its deliciousness.

Thinly slice 1 onion.

Soak the sliced onion in cold water for about 15 to 20 minutes. This step helps to remove any harshness and makes the onion pleasantly crisp.

After soaking, drain the onion well using a sieve, ensuring all excess water is removed.

Cut 1 green onion into roughly 5cm lengths and then slice them in half lengthwise. Slice 10 cloves of garlic thinly into slivers. (These optional vegetables will add wonderful flavor when cooked with the pork!)

Heat a pan over medium heat and add the marinated pork belly. Cook it until it’s nicely browned on both sides. The fat rendering from the pork will help it cook beautifully.

Once the pork belly is partially cooked, add the prepared green onions and garlic to the pan. Toss them with any remaining sauce from the marinade. Cooking the vegetables with the pork allows them to absorb the delicious flavors.
