Spicy & Sweet Gochujang Braised Potatoes with Tuna

Main Ingredients
  • 3 medium potatoes (about 500g after peeling)
  • 1 can (150g) tuna
  • 1/2 stalk of green onion

Cooking Instructions

Step 1

First, prepare the main ingredient: potatoes. After peeling, you should have about 500g of potatoes. This is typically around 3 medium-sized potatoes.

Step 2

Cut the peeled potatoes into roughly 1cm thick chunks. Place the cut potatoes in cold water for about 10 minutes to remove excess starch. This step helps prevent the potatoes from breaking apart too much during braising and allows them to absorb the seasoning better.

Step 3

Slice the green onion diagonally into large pieces. Since the green onion will be added at the beginning of the braising process, it’s best to cut it into larger pieces to maintain its texture and shape. If you like, you can also add half an onion, thinly sliced, for an enhanced flavor.

Step 4

Now, let’s prepare the braising sauce. In a wide pan or pot, first arrange the potatoes that have had their starch removed. Next, evenly spread the entire can of tuna over the potatoes. Add 1/2 Tbsp of minced garlic, 3.5 Tbsp of soy sauce, 1.5 Tbsp of corn syrup, a pinch of black pepper, 1.5 Tbsp of gochugaru, and 2 Tbsp of gochujang. Finally, add the sliced green onions and pour in 300ml of water.

Step 5

Gently stir the ingredients in the pan to mix the seasoning well with the water. Cover the pan and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and let it braise for about 12-13 minutes, or until the potatoes are tender. During the braising process, gently shake the pan or stir occasionally to prevent the bottom from sticking. Once the potatoes are cooked, taste the dish and adjust the seasoning as needed – add more soy sauce if it’s not salty enough, or more corn syrup if it’s not sweet enough, according to your preference.

And there you have it – a delicious Tuna and Potato Braise! This is one of my absolute favorite side dish recipes, so much so that it’s featured in my second cookbook. I highly recommend making this when potatoes are in season and at their best. I made this recently and ended up eating two bowls of rice!
