Main Ingredients

  • 4 large, fluffy potatoes
  • 1 sheet of dried kelp (approx. 10x10cm)
  • 1 onion
  • 1 stalk of green onion (scallion)

Seasoning

  • 1 Tbsp minced garlic
  • 4-5 Tbsp gochujang (Korean chili paste) (adjust to your spice preference)
  • 2 Tbsp soy sauce
  • 3 Tbsp corn syrup (or rice syrup)
  • 1 Tbsp sugar
  • 1-1.5 Tbsp gochugaru (Korean chili flakes) (add for extra heat)
  • 1 Tbsp toasted sesame seeds
  • 1.5 Tbsp perilla oil (or sesame oil)

Cooking Instructions

Gently rinse the kelp to remove excess salt, then place it in a bowl with plenty of water. Tip! Avoid heating the water immediately. Let the kelp steep to infuse its subtle flavor; this method yields a deeper umami taste.

Peel and thoroughly wash the potatoes. Cut them into thick pieces, about 1 to 1.5 cm thick. Avoid cutting them too thinly to maintain a pleasant texture.

Add the thickly cut potatoes to the water where the kelp has been steeping. Tip! This is a technique used in vegetarian and healthy cooking to create a flavorful vegetable broth using ingredients like kelp and dried shiitake mushrooms. 🙂

In a separate bowl, combine the gochujang, minced garlic, soy sauce, corn syrup, sugar, and gochugaru. Mix well to create the seasoning sauce.

Chop the onion into large pieces and thinly slice the green onion diagonally. Tip! Taste the seasoning sauce before adding it to the pot and adjust the flavor according to your preference to ensure the potatoes are perfectly seasoned!

As the mixture simmers, skim off any foam that rises to the surface with a spoon. This step helps to create a cleaner, clearer broth.

Continue to simmer, stirring occasionally to prevent sticking, until the liquid has reduced by more than half and the potatoes are tender and cooked through. Stir gently to avoid mashing the potatoes.
