  • 40g medium-sized anchovies
  • 1 Tbsp cooking oil

Today, we’ll be making a gochujang anchovy stir-fry, made even more delicious by adding Korean green peppers. It’s a fantastic side dish for meals and perfect for lunchboxes too.

First, prepare 40g of medium-sized anchovies. Place the anchovies in a dry pan over low heat and stir-fry gently to prevent burning. Continue to stir-fry until the anchovies turn a light brown color and become semi-translucent inside. This process removes any fishy smell and enhances their nutty flavor.

Once the anchovies are sufficiently stir-fried, push them to one side of the pan. Add 1 teaspoon of sugar to the empty space and let it melt slightly. Once the sugar caramelizes a bit, mix it with the anchovies to coat them. This coating helps prevent the anchovies from becoming too hard and makes the sauce adhere better. Next, add 1/2 teaspoon of soy sauce, 1 teaspoon of minced garlic, 1/2 teaspoon of red pepper flakes (gochugaru), and 1 tablespoon of red pepper paste (gochujang). Stir everything together with a spatula, as if you’re dividing it, until the seasonings are evenly distributed and well incorporated into the anchovies.

Now, add the Korean green peppers, cut into appropriate bite-sized pieces (about 3-4 cm long), and add the remaining 1 tablespoon of cooking oil. Once the green peppers start releasing moisture, continue to stir-fry the anchovies until all of this moisture has evaporated. The green peppers will become slightly tender and add a pleasant chewiness to the dish. Finally, sprinkle with toasted sesame seeds for added aroma to complete this delicious gochujang anchovy stir-fry.
