Main Ingredients- 10 sheets of dried shredded squid (gwipo) (medium size or larger)
- 2 Tbsp mayonnaise
Sauce Ingredients- 3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 2 Tbsp sesame oil
- 2 Tbsp sugar
- 1.5 Tbsp corn syrup (or rice syrup)
- 1 Tbsp cooking wine (mirin)
- 1 tsp sesame seeds
- 3 Tbsp gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 2 Tbsp sesame oil
- 2 Tbsp sugar
- 1.5 Tbsp corn syrup (or rice syrup)
- 1 Tbsp cooking wine (mirin)
- 1 tsp sesame seeds
Cooking Instructions
Step 1
To enhance the flavor and texture of the dried shredded squid, lightly grill it over low heat until about 80% cooked. Avoid grilling it until it’s too crispy; the key is to keep it moist and tender.
Step 2
Once lightly grilled, gently pound the dried shredded squid with your hands or a rolling pin to soften it. Pounding along the grain will help it absorb the sauce evenly and prevent it from becoming tough, ensuring a tender bite throughout.
Step 3
Cut the softened dried shredded squid into diamond shapes for easy eating. To further tenderize it and add a nutty richness, toss the squid with 2 tablespoons of mayonnaise until well coated. The mayonnaise will help break down any remaining toughness and balance the overall flavors.
Step 4
Now, let’s make the delicious sauce. In a bowl, combine 3 Tbsp gochujang, 1 Tbsp minced garlic, 1 Tbsp soy sauce, 2 Tbsp sesame oil, 2 Tbsp sugar, 1.5 Tbsp corn syrup, 1 Tbsp cooking wine, and 1 tsp sesame seeds. Mix well with a spoon until the sauce is thoroughly combined. Heat a tablespoon of cooking oil in a pan, add the prepared sauce, and bring it to a gentle simmer. Immediately reduce the heat to the lowest setting and cook for about 1 minute. Lightly cooking the sauce deepens its flavor.
Step 5
Add the mayonnaise-coated dried shredded squid to the pan with the cooked sauce. Gently toss everything together, ensuring the sauce evenly coats each piece of squid. Be careful not to break the squid as you mix. Continue mixing slowly until all pieces are well coated.
Step 6
Once the squid and sauce are thoroughly combined, turn off the heat. Sprinkle generously with sesame seeds for a final touch of flavor and visual appeal. Your delicious Gwipo Muchim is ready! Enjoy it with a bowl of warm rice or as a tasty accompaniment to a cold beer. Bon appétit!
