I recently managed to buy some precious dried beltfish (galchipo) after a long time and decided to make a delicious salad with it! Galchipo is quite rare as it’s only available at certain times, but once you taste it, you’ll be hooked by its unique and unforgettable flavor, unlike any other dried seafood. While stir-fried dried beltfish is also delicious, this time I tried a refreshing, spicy, and sweet salad version. It’s much softer and more appetizing than the stir-fried kind! It’s especially perfect as a beer snack! It makes a great rice side dish and a simple appetizer. Ingredients- Dried beltfish (Galchipo) 5 handfuls (approx. 200-250g)
Dressing- Gochujang (Korean chili paste) 2 Tbsp
- Mayonnaise 2 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Honey 2 Tbsp (or corn syrup)
- Sugar 2 Tbsp
- Cheongju (rice wine) 2 Tbsp (or mirin)
- Sesame seeds (toasted) for garnish
- Sesame oil for garnish
- Gochujang (Korean chili paste) 2 Tbsp
- Mayonnaise 2 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Honey 2 Tbsp (or corn syrup)
- Sugar 2 Tbsp
- Cheongju (rice wine) 2 Tbsp (or mirin)
- Sesame seeds (toasted) for garnish

Cooking Instructions
Step 1
First, prepare the dried beltfish. Tear or cut it into bite-sized pieces. It’s best to remove any tough parts or fins.
Step 2
Heat a dry pan (no oil needed) over medium-low heat. Add the dried beltfish and stir-fry for about 2-3 minutes until lightly golden. This step helps to remove any fishy smell and enhance its nutty flavor. Be careful not to burn it.
Step 3
Transfer the stir-fried dried beltfish to a separate bowl and let it cool slightly. Now, let’s make the delicious dressing. In a small bowl, combine 2 Tbsp gochujang, 2 Tbsp mayonnaise, 1 Tbsp gochugaru, 2 Tbsp honey, 2 Tbsp sugar, and 2 Tbsp cheongju. Mix well until smooth. You can substitute honey with corn syrup or cheongju with mirin if needed.
Step 4
Add the cooled dried beltfish to the prepared dressing. Gently mix and coat the beltfish evenly with the sauce. Be careful not to overmix, as this can cause the beltfish to break apart. A gentle massage motion works best.
Step 5
Finally, drizzle with a little sesame oil and sprinkle with toasted sesame seeds for a finishing touch. Your delicious dried beltfish salad is ready! Serve it on a nice plate as a fantastic side dish or a delightful accompaniment to drinks. It’s delicious right away, but it’s also a treat when chilled slightly in the refrigerator.
