Dakgangjeong Ingredients

  • 500g cubed chicken breast

Spicy & Sweet Sauce Ingredients

  • 3 Tbsp potato starch or cornstarch
  • 6 cloves garlic, minced
  • 1/2 medium onion, finely chopped
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp oyster sauce
  • 1 Tbsp corn syrup or oligodang
  • 1/4 cup water (approx. 50ml)

Cooking Instructions

Step 1

Prepare 500g of cubed chicken breast. Since it’s already cubed, you don’t need to trim or marinate it separately, which makes this recipe very convenient. Place the chicken breast in a resealable plastic bag. Add 3 tablespoons of starch and shake gently or massage the bag to ensure the starch evenly coats each piece of chicken. This coating will help achieve a wonderfully crispy texture after cooking.

Preheat your air fryer to 180°C (350°F) for 5 minutes. Line the air fryer basket with parchment paper and arrange the starch-coated chicken breast cubes in a single layer, ensuring they don’t overlap. Cook for 8 minutes.

After 8 minutes, flip the chicken pieces over and cook for another 8 minutes at 180°C (350°F). This total cooking time of 16 minutes should result in chicken that is crispy on the outside and tender on the inside.

Take a peek at the chicken after cooking! It should look golden brown and beautifully fried. The aroma will be enticing, and you’ll be tempted to snack on a piece right away. It’s incredibly delicious and hard to resist.

While the chicken is cooking, let’s prepare the sauce. Mince 6 cloves of garlic and finely chop about half a medium onion. Heat a little oil in a pan over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and the onion becomes translucent. Sautéing well is key to bringing out their sweetness.

Once the onions are softened and fragrant, add 2 tablespoons of gochujang, 1 tablespoon of oyster sauce, 1 tablespoon of corn syrup, and 1/4 cup of water. Stir everything together and bring the sauce to a gentle simmer over medium-low heat. Let it bubble until it thickens slightly.

Add the crispy, air-fried chicken breast to the simmering sauce. Toss gently to coat each piece evenly with the delicious spicy and sweet sauce. Serve immediately while warm for the best texture. This Dakgangjeong is perfect as a kid-friendly snack or a savory appetizer for adults.
