Main Ingredients

  • 200g boneless chicken thigh meat
  • 200g cabbage
  • 1 stalk green onion
  • 5 perilla leaves

Dakgalbi Seasoning

  • 1 Tbsp low-sugar gochujang
  • 1 Tbsp red pepper flakes (gochugaru)
  • 2 Tbsp soy sauce
  • 1 Tbsp allulose
  • 1 Tbsp minced garlic

Garnish (Optional)

  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare the vegetables. Slice the green onion into approximately 5cm pieces. Chop the cabbage into similarly sized chunks. Wash the perilla leaves, pat them dry, then roll them up and slice thinly into shreds. This helps them absorb the sauce better and enhances flavor.

Step 2

Let’s make the delicious Dakgalbi seasoning. In a bowl, combine 1 tablespoon of low-sugar gochujang, 1 tablespoon of red pepper flakes, 2 tablespoons of soy sauce, 1 tablespoon of allulose, and 1 tablespoon of minced garlic. Stir well until all the ingredients are evenly mixed to create the seasoning paste. Using allulose provides sufficient sweetness without sugar, making it a safe option for diabetic meal plans.

Step 3

Now, it’s time to stir-fry the chicken. Heat a moderate amount of cooking oil in a pan. Add the cleaned boneless chicken thigh meat and the sliced green onion. Sprinkle pepper over the chicken to season it, which helps to remove any gamey odors and adds flavor. Stir-fry over medium heat until the chicken is golden brown and looks nicely seared.

Step 4

Once the chicken is golden brown and cooked, cut it into bite-sized pieces. Next, add the chopped cabbage and the prepared seasoning paste to the pan. Mix everything together thoroughly, ensuring the sauce evenly coats the chicken and vegetables as it cooks.

Step 5

To prevent the sauce from burning, reduce the heat to medium-low. Continue to cook slowly until the cabbage softens to your liking and the sauce is well absorbed into all the ingredients. During this stage, the natural sweetness of the vegetables will emerge, contributing to a more flavorful Dakgalbi.

Step 6

Serve warm rice in a bowl, mounding the delicious Dakgalbi generously on top. Finally, arrange the thinly shredded perilla leaves attractively over the Dakgalbi, and sprinkle a pinch of sesame seeds for a nutty aroma.
