  • 1 pack Dakbokkeumtang-cut chicken (chicken for stir-fry)
  • 1 handful green onions
  • 1/3 carrot
  • 600ml water or chicken broth
  • 1 onion
  • 1/4 head of cabbage

Cooking Instructions

Today, we’re going to make Dakbokkeumtang, a spicy and sweet braised chicken dish loved by everyone, young and old! It’s perfect as a side dish for rice or even as a hearty meal on its own.

First, thoroughly wash the chicken pieces meant for Dakbokkeumtang. To make the chicken tender and remove any unpleasant odors, soak the chicken in milk for about 10 to 20 minutes. The milk will effectively absorb any blood and gamey smell.

Rinse the chicken clean under running water after soaking in milk and drain it completely. Now, let’s prepare the delicious sauce. In a pot or deep pan, add the chicken. Combine 600ml of water or chicken broth with 2 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp soy sauce, 1 tsp sugar, and a pinch of black pepper. Mix well to create the sauce. Once the sauce begins to boil, add the prepared chicken and simmer over medium heat.

When the chicken is about more than halfway cooked, add all the prepared vegetables (chopped onion, carrot, and cabbage). Continue to simmer until the sauce thickens and reduces slightly as the vegetables cook. Feel free to taste and adjust seasoning; add a little more soy sauce if it’s bland, or a touch more sugar if you prefer it sweeter.
