An incredibly simple chicken stir-fry made with ingredients you likely already have at home. This dish offers a delightful balance of spicy, sweet, and savory flavors with a unique curry aroma.

  • 500g boneless chicken thigh or breast
  • 2 medium sweet potatoes
  • 1 medium onion

Begin by preparing the chicken. Rinse 500g of boneless chicken thoroughly under cold running water several times to ensure it’s clean. Then, add 2 tablespoons of cooking wine to the chicken and gently massage it in. Let it marinate for a few minutes; this step helps to eliminate any gamey odors and tenderize the meat. 🙂

Grab a large pot or a deep wok. Add the marinated chicken to the pot. Peel the 2 sweet potatoes and cut them into thick, coin-shaped slices. Add these sliced sweet potatoes to the pot along with the chicken. The sweet potatoes will absorb the flavors and add a lovely sweetness to the stew as they cook.

Now, let’s prepare the flavorful sauce. In a separate bowl, combine 3 tablespoons of gochujang, 2 tablespoons of gochugaru, 3 tablespoons of soy sauce, 2 tablespoons of honey, and 1 tablespoon of plum extract. Mix these ingredients well to create a rich, spicy, and sweet sauce. Pour this sauce evenly over the chicken and sweet potatoes in the pot.

Place the pot over medium heat and bring it to a simmer. Cook for about 10-15 minutes, or until the chicken and sweet potatoes are about halfway cooked through and the sauce has started to thicken slightly. At this point, add 1 peeled and roughly chopped medium onion and 1 teaspoon of minced garlic. The onion will add sweetness and depth, while the garlic will enhance the overall savory notes.

Finally, for that special touch, sprinkle 1 tablespoon of curry powder over the ingredients. Stir everything together to ensure the curry powder is well distributed. Continue to cook, stirring occasionally, until the chicken is fully cooked and tender, and the sauce has thickened to your desired consistency. This will result in a delicious and fragrant Curry Chicken Stew, perfect as a hearty meal or a delightful side dish!
