Crafting Refreshing Cold Bibim Noodles to Beat the Heat
The weather has been incredibly hot lately, hasn’t it? That’s why I’ve prepared the perfect cold noodle recipe for these sweltering days! ♡♡♡ It’s a delightful blend of spicy, sweet, and refreshing flavors that will instantly cool you down.
Noodle Base Ingredients- 1 serving of Naengmyeon noodles
- 1 egg
- 1/3 cucumber
- 1 Cheongyang chili pepper (optional, for extra spiciness)
- 1 pack of chilled Naengmyeon broth
Spicy & Sweet Bibim Sauce- 3 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Soy sauce
- 1 Tbsp Sugar or corn syrup
- 1 pinch Toasted sesame seeds
- 1 tsp Sesame oil
- 1/2 tsp Prepared mustard (adjust to taste)
- 3 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Soy sauce
- 1 Tbsp Sugar or corn syrup
- 1 pinch Toasted sesame seeds
- 1 tsp Sesame oil
- 1/2 tsp Prepared mustard (adjust to taste)
Cooking Instructions
Step 1
First, let’s boil the egg. Add water to a pot along with a little salt and vinegar. Once the water reaches a rolling boil, carefully add the egg and cook for about 10 minutes to achieve a hard-boiled texture. After cooking, transfer the egg to cold water to cool, then peel it and set aside.
Step 2
Now, let’s prepare the delicious bibim sauce. In a bowl, combine the gochujang, gochugaru, soy sauce, sugar (or corn syrup), sesame seeds, sesame oil, and mustard. Mix everything thoroughly until well combined. This sauce tastes even better when made in advance and allowed to rest in the refrigerator, allowing the flavors to meld beautifully. You can use it whenever needed.
Step 3
It’s time to prepare the toppings for the noodles. Wash the cucumber thoroughly, then cut it in half lengthwise and slice it thinly into julienne strips. If you’re using a Cheongyang chili pepper, remove the seeds and finely chop it. (You can omit this if you prefer less heat.)
Step 4
Naengmyeon noodles can sometimes clump together. Before boiling, gently loosen them with your hands. This helps ensure the noodles cook evenly and don’t stick to each other.
Step 5
Bring a large pot of water to a rolling boil. Once boiling, add the loosened naengmyeon noodles and cook them. The cooking time can vary depending on the brand of noodles, so check the package instructions or test a strand to see if they’re cooked. Typically, 1-2 minutes is sufficient.
Step 6
Immediately after cooking, rinse the naengmyeon noodles thoroughly under cold running water. This step is crucial for making the noodles firm and chewy. Gently agitate the noodles while rinsing to prevent them from clumping. Finally, drain them well in a colander.
Step 7
Prepare one pack of cold naengmyeon broth. Using a store-bought broth is convenient and provides a refreshing taste right away. Make sure the broth is well-chilled from the refrigerator.
Step 8
Arrange the drained naengmyeon noodles attractively in a serving bowl. You can use a mold for a neat presentation or gently swirl them by hand to create a pleasing mound.
Step 9
Now, generously spoon your prepared bibim sauce over the noodles. Top with the julienned cucumber, the hard-boiled egg, and the chopped chili pepper, if using, for a beautiful presentation. Pour in the chilled broth to create a soupy base for your bibim noodles, and enjoy mixing everything together!
