Tender pork ribs coated in a spicy and sweet sauce, topped with gooey, stretchy cheese! This irresistible dish is a crowd-pleaser and perfect for special occasions or a comforting home-cooked meal. Prepare to be hooked!
Pork Ribs Boiling Ingredients
- 1kg pork ribs
- 1 Tbsp whole peppercorns
- 2 bay leaves
- Plenty of water
Sauce Ingredients
- 4 Tbsp soy sauce (using a standard soup spoon for measurement)
- 4 Tbsp gochujang (Korean chili paste) (using a standard soup spoon for measurement)
- 4 Tbsp gochugaru (Korean chili powder) (using a standard soup spoon for measurement)
- 1 Tbsp tuna extract (or fish sauce)
- 2 Tbsp minced garlic
- 2 Tbsp minced spicy green chili peppers (adjust to taste)
- 4 Tbsp cooking wine (like mirin)
- 2 Tbsp sesame oil
- 3 Tbsp sugar
- Pinch of black pepper
- 1 onion (pureed)
- 4 Tbsp soy sauce (using a standard soup spoon for measurement)

- 4 Tbsp gochugaru (Korean chili powder) (using a standard soup spoon for measurement)
- 1 Tbsp tuna extract (or fish sauce)

- 4 Tbsp cooking wine (like mirin)
- 2 Tbsp sesame oil
- 3 Tbsp sugar
- Pinch of black pepper
- 1 onion (pureed)
Cooking Instructions
Step 1
Soak the pork ribs in cold water to remove any blood. Let them sit for at least 1 hour to drain the blood thoroughly, which helps reduce any gamey smell.
Step 2
Cut the pork ribs into manageable, bite-sized pieces. Slicing between the bones will help the sauce penetrate better and make them easier to eat.
Step 3
In a pot, add plenty of water, the pork ribs, whole peppercorns, and bay leaves. Bring to a boil over high heat. This initial boil helps remove impurities and tenderizes the meat.
Step 4
Once the water boils, reduce the heat to medium and simmer for about 10 minutes. Drain the ribs and rinse them thoroughly under cold running water.
Step 5
Return the cleaned pork ribs to the pot. This time, add enough water to generously cover the ribs. Cover the pot and let them simmer gently over medium-low heat.
Step 6
Simmer for about 1 hour until the meat is tender and easily separates from the bone. While the ribs are cooking, prepare the delicious sauce.
Step 7
In a large bowl, combine 4 Tbsp soy sauce, 4 Tbsp gochujang, 4 Tbsp gochugaru, 1 Tbsp tuna extract, 2 Tbsp minced garlic, 2 Tbsp minced spicy green chili peppers, 4 Tbsp cooking wine, 2 Tbsp sesame oil, 3 Tbsp sugar, a pinch of black pepper, and the pureed onion. Mix well to create the sauce. (Measurements are based on a standard Korean soup spoon.)
Step 8
After draining the ribs, add about 2/3 of the prepared sauce to the pot, leaving just a little bit of water. (Adjust the amount of sauce based on the quantity of ribs. This recipe is suitable for approximately 3 servings.)
Step 9
Add the sliced king oyster mushrooms and simmer with the ribs until the sauce is well absorbed and slightly thickened. The mushrooms add a wonderful depth of flavor.
Step 10
Continue simmering until the sauce coats the ribs evenly and becomes slightly thick. Stir occasionally to prevent the sauce from burning.
Step 11
Once the ribs are cooked and sauced, generously sprinkle mozzarella cheese over the top and let it melt. The combination of cheesy goodness and the spicy-sweet ribs is absolutely divine! Enjoy immediately while hot. It’s also delicious reheated the next day. For an extra spicy kick, feel free to add more green chilies!
