  • Green Onion 1 handful (finely chopped)

Today, we’re going to make ‘Shepherd’s Purse Salad with Gochujang,’ a real ‘rice thief’ that’s sure to awaken your appetite. Prepare for a dish so delicious, you’ll finish a whole bowl of rice in no time!

First, carefully wash the shepherd’s purse under running water to remove any soil. Remove any wilted leaves or tough stems. To maintain its vibrant green color, bring a pot of water to a boil with a pinch of salt (about 1/2 tsp). Briefly blanch the shepherd’s purse for just 10-15 seconds. Be careful not to overcook, as it can become mushy. Immediately rinse the blanched greens under cold water to stop the cooking process, then gently squeeze out excess water with your hands.

Place the squeezed shepherd’s purse in a bowl. Add all the seasoning ingredients: 1 Tbsp Gochujang, 1 tsp Gochugaru, 1 tsp Soy Sauce, 1/2 tsp Sugar, a little Minced Garlic, 1 tsp Sesame Oil, and finally, about 1 tsp of Sesame Seeds for that nutty aroma. Also, add the finely chopped green onion.

Gently mix and toss the shepherd’s purse with the seasonings until everything is well combined. Be careful not to mash the greens. Once evenly coated with the delicious gochujang dressing, your fragrant Shepherd’s Purse Salad is ready! It’s wonderful served immediately, but for an even more delightful experience, chill it in the refrigerator for a bit before serving.
