Spicy & Sweet Braised Whelk with Teriyaki Sauce

Introducing the first in our ‘Side Dish Parade’! This is a simple yet flavorful braised whelk, made with teriyaki sauce and fried soy sauce. We’ve added red and green chili peppers for a beautiful color harmony and a touch of spicy kick. This braised dish is a perfect companion to grilled pork belly or beef. For an extra zing, you can add a dab of wasabi when serving, especially when enjoying it with meat. Enjoy this delightful whelk dish that’s sure to become a favorite!

Main Ingredients

  • 500g prepared whelk slices
  • 6 Cheongyang chili peppers (spicy Korean green chilies)
  • 1 Red chili pepper
  • 3 Tbsp chopped green onions
  • 1 tsp minced garlic

Cooking Instructions

First, place the sliced red and green chili peppers at the bottom of a pot. Then, evenly scatter the chopped green onions on top.

Now, let’s prepare the braising sauce. In a bowl, combine the teriyaki sauce and fried soy sauce. Add the corn syrup to give it a nice shine and thicker consistency, and mix well. (Tip: If your teriyaki sauce and fried soy sauce are already quite sweet, you can adjust or omit the corn syrup.)

Arrange the prepared whelk slices over the vegetables in the pot. Pour the prepared sauce over the whelk. Add 300ml of dried pollack broth (or water). Bring to a boil over high heat, then reduce the heat to low and simmer gently until the sauce has reduced and the whelk is well-infused with flavor.

As the braising liquid reduces to a simmer, the dish is nearing completion. The whelk, which might initially be ivory-colored, will gradually turn a rich brown as it absorbs the sauce.

Turn off the heat and let the braised whelk cool slightly. As it cools, the whelk will absorb even more of the savory sauce, deepening its flavor. Once cooled, transfer to a serving dish. You’ve now completed your delicious braised whelk with teriyaki sauce! Teriyaki sauce, often used for fish dishes, pairs wonderfully with other seafood. Using fried soy sauce adds an extra layer of umami. Enjoy!
