Here’s a delightful potato side dish made with fresh, seasonal potatoes. This simple yet incredibly flavorful gochujang-braised potato dish is so good, it’ll have you reaching for another bowl of rice!
Main Ingredients- 6 potatoes (choose small, firm ones)
- 1 Tbsp cooking oil
- 100ml water
- 1 Tbsp oligodang (corn syrup)
- A pinch of toasted sesame seeds
Spicy & Sweet Gochujang Braising Sauce- 1 Tbsp gochujang (Korean chili paste)
- 1 tsp Jin Ganjang (Korean soy sauce)
- 1 Tbsp water
- 1 Tbsp gochujang (Korean chili paste)
- 1 tsp Jin Ganjang (Korean soy sauce)
- 1 Tbsp water
Cooking Instructions
Step 1
First, prepare 6 potatoes. Medium-sized potatoes work best for braising, and cutting them into thick pieces enhances the texture. Slice them thickly, about 2-3cm in thickness. You can wash the skins thoroughly and use them, or peel them according to your preference.
Step 2
Heat 1 tablespoon of cooking oil in a pan over medium heat. Allow the pan to warm up.
Step 3
Add the sliced potatoes to the pan and stir-fry over medium heat for about 2 minutes until the edges are lightly golden. Stir-frying them once like this helps to firm up the surface, preventing them from breaking apart during the braising process.
Step 4
Once the potato edges are lightly cooked, pour in 100ml of water. This is a suitable amount of water, considering the potatoes will release some moisture as they cook.
Step 5
Cover the pan with a lid and reduce the heat to low. Let the potatoes cook for about 5-7 minutes. Then, lift the lid and check if the potatoes are tender by piercing them with a fork. If they are not fully cooked, cover and continue cooking for a little longer.
Step 6
Once the potatoes are sufficiently cooked, remove the lid and increase the heat back to medium. Now, add the pre-mixed gochujang braising sauce (1 Tbsp gochujang, 1 tsp Jin Ganjang, 1 Tbsp water) to the pan and gently mix it with the potatoes.
Step 7
Stir gently with a spatula to ensure the sauce coats the potatoes evenly. As the sauce simmers and thickens, you’ll notice it becoming glossy. When the sauce has reduced considerably and clings to the potatoes, turn off the heat. Finally, add 1 tablespoon of oligodang and stir once more to incorporate a subtle sweetness.
Step 8
Sprinkle some toasted sesame seeds over the finished braised potatoes for garnish. These thick-cut, chewy braised potatoes are incredibly savory with every bite, making them the perfect accompaniment to rice. Instead of slicing them thinly, try making them thick for a wonderful sweet and spicy treat!
