Main Ingredients- 1 pack chicken wings (approx. 500g)
- 2 medium potatoes
- 1/4 carrot
- 1/2 onion
- 2-3 cloves garlic
- 1/2 stalk green onion
- 2 Korean red chili peppers (Cheongyang peppers)
Braising Sauce- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp rice wine (mirin)
- 1 Tbsp plum extract
- 3-5 Tbsp water (for adjusting consistency)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp rice wine (mirin)
- 1 Tbsp plum extract
- 3-5 Tbsp water (for adjusting consistency)
Cooking Instructions
Step 1
Rinse the chicken wings thoroughly. Cut the potatoes and onion into large chunks. Slice or mince the garlic, and diagonally slice the green onion.
Step 2
In a wide pan or wok, combine the prepared chicken wings, potatoes, onion, green onion, and garlic. Before turning on the heat, add all the braising sauce ingredients (gochugaru, gochujang, soy sauce, sugar, corn syrup, rice wine, plum extract). Mix everything together with your hands, gently massaging the sauce into the ingredients. Let it marinate for about 20-30 minutes. This step allows the flavors to deeply penetrate the chicken and vegetables, making it much tastier.
Step 3
Add 3-5 tablespoons of water and mix the sauce well with the ingredients one more time. Place the pan over medium-high heat. Stir-fry for about 5 minutes to let the sauce coat the ingredients and start caramelizing. Then, cover the pan, reduce the heat to medium, and let it simmer and cook. If the sauce becomes too dry during cooking, add 1-2 tablespoons of water at a time, stirring occasionally to prevent sticking, and cover to continue cooking.
Step 4
The dish is almost ready when the potatoes are tender and cooked through. Pierce the potatoes with a chopstick to check for doneness; they should be easily pierced. Simmering for about 20 minutes should be sufficient. Finally, add the diagonally sliced Cheongyang peppers and stir briefly for an extra kick of spicy flavor. Enjoy your delicious meal!
