Spicy & Sweet Bibim Guksu with All-Purpose Sauce

Bibim Guksu Ingredients
- Somen noodles, for 6 servings
- Scallions, 1 bunch (finely chopped)
- Pickled radishes (danmuji), 1 pack (julienned)
- Sesame seeds, a pinch
- Sesame oil, 6 Tbsp
All-Purpose Sauce Ingredients (for 6 servings)
- Minced pork, 100g
- Water, 4 Tbsp
- Minced onion, 4 Tbsp
- Shredded green onion, 4 Tbsp
- Cooking wine (mirin or cheongju), 4 Tbsp
- Sugar, 4 Tbsp
- Corn syrup (or mulyeot), 4 Tbsp
- Soy sauce, 8 Tbsp
- Pear, 1/4 (grated)
- Water, 3 Tbsp
- Minced garlic, 1 Tbsp
- Minced ginger, a pinch (optional)
- Gochugaru (Korean chili flakes), 4-5 Tbsp (adjust to taste)
- Black pepper, a pinch
- Minced pork, 100g

Cooking Instructions
Step 1
In a wide pan, combine the minced pork, 4 Tbsp water, and 4 Tbsp minced onion. Place over medium heat. Use chopsticks or a spatula to break up any clumps of pork as it cooks.
Step 2
Once the pork is partially cooked, add the 4 Tbsp shredded green onion and stir-fry together. Next, add 4 Tbsp cooking wine, 4 Tbsp sugar, 4 Tbsp corn syrup, and 8 Tbsp soy sauce. Let it simmer until all ingredients are well combined and the pork is thoroughly cooked. Once the sauce thickens, turn off the heat and let it cool completely.
Step 3
To the cooled sauce base, add the grated 1/4 pear, 1 Tbsp minced garlic, and a pinch of minced ginger. Mix well. Finally, stir in 4-5 Tbsp gochugaru and a pinch of black pepper until evenly distributed. Your delicious all-purpose sauce is now ready!
Step 4
Bring a large pot of water to a rolling boil. Add the somen noodles and cook until al dente. Immediately rinse the cooked noodles under cold running water several times to remove excess starch. Drain thoroughly in a colander, ensuring no excess water remains, to prevent the noodles from becoming mushy.
Step 5
Place the drained noodles in a large mixing bowl. Add about 1.5 to 2 ladles of the all-purpose sauce per serving. Top with the julienned pickled radishes and finely chopped scallions. Finish with a sprinkle of sesame seeds and a drizzle of 6 Tbsp sesame oil. Give it a good mix, and your flavorful bibim guksu is complete! Enjoy your meal!
