- Soy Sauce 7 Tbsp
- Cooking Wine (Mirin or Cheongju) 7~8 Tbsp
- Gochujang (Korean Chili Paste) 1/2 Tbsp
- Gochugaru (Korean Chili Flakes) 1/2 Tbsp
- Mayonnaise 3 Tbsp
- Minced Garlic 1 Tbsp
- Sesame Oil, a little
- Sesame Seeds, a little
Cooking Instructions
Step 1
Prepare 300g of dried shredded squid (Jinjimi-chae). Remove any tough parts and cut it into bite-sized pieces (about 2-3 cuts per strip). Place the prepared squid into a large bowl or a resealable plastic bag. Pour 7-8 tablespoons of cooking wine (Mirin or Cheongju) over it and mix well. This step helps to tenderize the squid and remove any gamey odor, enhancing its flavor. Let it marinate for about 10 minutes.
Step 2
While the squid is marinating, prepare the seasoning sauce. In a small bowl, combine 7 tablespoons of soy sauce, 1/2 tablespoon of gochujang (Korean chili paste), and 1/2 tablespoon of gochugaru (Korean chili flakes). Stir until well combined and smooth. Be mindful not to add too much gochujang, as it can make the dish too salty.
Step 3
Now, let’s lightly stir-fry the seasoning to mellow out the spiciness and develop its aroma. Heat a pan over medium-low heat. Add the prepared seasoning sauce to the pan and stir-fry briefly, for about 30 seconds to 1 minute, ensuring it doesn’t burn. This process deepens the flavor of the sauce.
Step 4
Add the marinated dried shredded squid to the pan with the stir-fried seasoning. Continue to cook over low heat, stirring gently with a spatula to ensure the squid is evenly coated with the sauce. It’s crucial to maintain a low heat to prevent the squid from burning or becoming tough. Stir-fry for about 2-3 minutes.
Step 5
Once the squid has absorbed some of the sauce, add 1 tablespoon of minced garlic. While you can add the garlic when making the sauce, adding it midway through cooking allows its fresh aroma to be better preserved. Stir and cook for another minute after adding the garlic to release its fragrance.
Step 6
Taste the dish as it cooks. If it’s not salty enough for your preference, add another 1-2 tablespoons of soy sauce to adjust the seasoning. The amount needed can vary depending on the type of Jinmichae and your personal taste, so always taste and adjust accordingly. Be careful not to over-salt it.
Step 7
When all ingredients are well-stirred and cooked, turn off the heat. Off the heat, add a drizzle of sesame oil (about 1/2 tablespoon) and a sprinkle of sesame seeds (about 1 tablespoon). Mix gently to add a nutty aroma. Adding sesame oil and seeds after turning off the heat helps to preserve their fragrance.
Step 8
Finally, add 3 tablespoons of mayonnaise and mix everything together until well combined. Your delicious stir-fried dried shredded squid with gochujang is now ready! The mayonnaise not only tenderizes the squid but also adds a wonderful creaminess and savory flavor that even children will love. It’s delicious served warm or cooled. Enjoy your meal!
