Main Ingredients
  • 1 pack Enoki mushrooms (trim off about 1cm from the base)
  • A little bit of green onion (finely chopped)
  • A little cooking oil

Spicy & Sweet Seasoning (using tablespoon as reference)
  • 1 Tbsp Gochujang (Korean chili paste, approx. 15g)
  • 1.5 Tbsp Sugar (approx. 20g)
  • 1 Tbsp Minced garlic (approx. 10g)
  • 2 Tbsp Chili oil (approx. 30ml)
  • 3 Tbsp Buldak sauce (approx. 45ml)

Cooking Instructions

Step 1

First, trim about 1cm from the base of the enoki mushrooms. This helps the mushrooms hold their shape and not fall apart during cooking.

Step 2

Gently rinse the prepared enoki mushrooms under running water. Be careful not to wash them too vigorously, as this can cause them to clump. Lightly shake off excess water.

Step 3

Now, let’s make the delicious sauce! In a bowl, combine 1 tablespoon of gochujang, 1 tablespoon of minced garlic, 1.5 tablespoons of sugar, 2 tablespoons of chili oil, and 3 tablespoons of Buldak sauce. Mix everything thoroughly until smooth and well combined, ensuring there are no lumps.

Step 4

Arrange the drained enoki mushrooms in a single layer in a wide frying pan. Pour the prepared spicy and sweet sauce evenly over the mushrooms. Finally, drizzle about half a rotation of cooking oil around the edge of the pan; this adds an extra layer of flavor and helps with sautéing.

Step 5

Sauté the enoki mushrooms over medium heat. The mushrooms will release their natural moisture, which will combine with the sauce and naturally thicken. Gently toss and stir with a spatula to ensure the sauce coats the mushrooms evenly as they cook. Keep an eye on the heat to prevent burning.

Step 6

Once the enoki mushrooms have absorbed the sauce and have a glossy appearance, turn off the heat. Sprinkle the finely chopped green onions over the top for a beautiful finish. Your delicious Buldak-style braised enoki mushrooms are now ready!
