Spicy Stir-Fried Sweet Potato Stems
[Spicy Stir-Fried Sweet Potato Stems] A Staple Side Dish for a Rustic Meal
A recipe from my mother! This is a simple and spicy stir-fried sweet potato stem dish. It’s also delicious mixed with rice!
Main Ingredients
- 150g Sweet potato stems (prepared)
- 10cm segment of Green onion
Seasoning
- 2 tsp Soy sauce
- 2 tsp Red pepper flakes (Gochugaru)
- 2 tsp Perilla oil (Deulgireum)
- 1 tsp Toasted sesame seeds
- 2 tsp Soy sauce

Cooking Instructions
Step 1
First, prepare the sweet potato stems by peeling off the tough outer skin and cutting them into bite-sized pieces (about 5-7cm). If they are already peeled, simply rinse them thoroughly under running water. In a pan, combine the prepared sweet potato stems, 2 tsp of perilla oil, and 2 tsp of soy sauce. Stir-fry over medium heat for about 3-4 minutes until the stems begin to soften.
Step 2
Once the sweet potato stems are somewhat cooked, add 2 tsp of red pepper flakes and continue to stir-fry. Stir constantly to prevent the pepper flakes from burning, and cook for another 1-2 minutes until the seasonings are well incorporated.
Step 3
Finely chop the green onion. Add the chopped green onion to the pan with the stir-frying sweet potato stems and cook for about 1 minute more, until the fragrance of the green onion is released. Adding green onion enhances the overall flavor.
Step 4
When all ingredients are well stir-fried, turn off the heat. Finally, sprinkle in 1 tsp of toasted sesame seeds. Gently stir with a spoon or spatula to mix in the sesame seeds. Your delicious and spicy stir-fried sweet potato stems are now ready! They are incredibly tasty served over a bowl of warm rice.
