Spicy Stir-Fried Sweet Potato Stems Recipe
Seasonal Delicacy! How to Make Deliciously Spicy and Crunchy Sweet Potato Stems
A rice-stealing dish with a chewy texture and a sweet and spicy sauce! Make delicious side dishes with stir-fried sweet potato stems, loved by everyone. They are also rich in dietary fiber, making them healthy.
Main Ingredients- 200g sweet potato stems
- 1/2 stalk green onion, chopped
Seasoning Ingredients- 1.5 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp soy sauce for braising
- 1 tsp minced garlic
- 1 Tbsp sugar
- A little sesame oil
- 1 Tbsp vegetable oil (sunflower oil, etc.)
- 1 Tbsp toasted sesame seeds
- 1.5 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp soy sauce for braising
- 1 tsp minced garlic
- 1 Tbsp sugar
- A little sesame oil
- 1 Tbsp vegetable oil (sunflower oil, etc.)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the sweet potato stems. Carefully peel off the tough outer skin using a knife or a vegetable peeler, then cut them into bite-sized lengths.
Step 2
Boil plenty of water in a pot and add 1 tsp of salt. Once the water is boiling, add the prepared sweet potato stems and blanch for about 3 minutes. (Tip: I blanched them briefly to maintain a crunchy texture. If you prefer a softer texture, increase the blanching time.) Immediately rinse the blanched stems under cold water and wash them thoroughly two to three times.
Step 3
Cut the washed sweet potato stems into 3-4cm lengths for easy eating. Heat 1 Tbsp of vegetable oil in a pan over medium-low heat. Add the chopped green onion and minced garlic and stir-fry until fragrant. It’s important to bring out the flavors of the ingredients without burning them.
Step 4
To the fragrant stir-fried green onion and garlic, add the gochugaru, sugar, and soy sauce. Turn up the heat to high and stir-fry quickly for 5 minutes. Mix well with a spatula to ensure the seasoning coats the sweet potato stems evenly.
Step 5
Finally, add sesame oil and toasted sesame seeds, mix lightly, and turn off the heat immediately. Transfer the stir-fry to a wide bowl or plate. (Tip: Leaving it in the hot pan can make the sweet potato stems mushy due to residual heat, so transferring it right away helps maintain its crispness.)
