  • 1/5 Onion (sliced into strips)
  • 1/4 Red Bell Pepper (sliced into strips)
  • 1/6 Yellow Bell Pepper (sliced into strips)
  • 3 cloves Garlic (thinly sliced)
  • 1 piece Aged Radish Kimchi or well-fermented Chonggak Kimchi (approx. 150-200g, rinse lightly and slice thinly)
  • 2 Tbsp Cooking Oil

Seasoning

  • 1 tsp Oyster Sauce
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Cooking Wine (Mirin or Cheongju)
  • 1 Tbsp Oligodang (Korean oligosaccharide syrup)
  • 1 Tbsp Sesame Oil
  • 1/2 Tbsp Toasted Sesame Seeds
  • A pinch of Black Pepper

Cooking Instructions

First, prepare all your ingredients meticulously. Clean the squid by removing the innards and peeling off the skin. For the aged radish kimchi, if it’s too sour, rinse it lightly under running water to wash off some of the seasoning, then squeeze out the excess water and slice it. This step helps to prevent the stir-fry from becoming too salty or overly sour.

Slice each ingredient into bite-sized pieces. Cutting the squid into rings will give it a pleasant texture when cooked. Slice the onion and bell peppers into strips. Thinly slice the garlic to enhance its aroma. For the aged radish kimchi, slice it thinly, almost like wafer-thin slices, so it absorbs the seasoning well.

Now, let’s start stir-frying! Heat 2 tablespoons of cooking oil in a pan. Add the sliced garlic, sliced onion, bell peppers, and the sliced aged radish kimchi. Stir-fry over high heat for about 1-2 minutes, just enough to soften the vegetables slightly and bring out the flavor of the kimchi.
