Main Ingredients

  • 2 fresh squids (approx. 278g after preparation)
  • 1/2 medium onion (approx. 76g)
  • 1/4 carrot (approx. 44g)
  • 1/4 large green onion (scallion) (approx. 27g)
  • 5-6 Korean chili peppers (Cheonpi-chu) (approx. 38g)
  • 1 Korean chili pepper (for extra spice) (approx. 10g)
  • 2 Tbsp olive oil
  • 1/2 Tbsp sesame oil
  • A pinch of black pepper
  • A sprinkle of sesame seeds

Perfectly Balanced Spicy Squid Sauce

  • 1 Tbsp gochujang (Korean chili paste)
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp soy sauce
  • 1-2 Tbsp mirin (or cooking wine)
  • 1.5 Tbsp sugar
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

Rinse the fresh squid thoroughly under cold running water. Cut the body into 1 to 1.2 cm thick strips and cut the tentacles into 2-3 pieces each, depending on their length.

Step 1

Step 2

Slice the green onion diagonally into large pieces. Slice the Korean chili pepper diagonally for a touch of heat. Prepare 1/2 Tbsp of minced garlic.

Step 2

Step 3

Julienne the onion and carrot into thin strips about 3mm thick. Cut the Korean chili peppers (Cheonpi-chu) in half lengthwise to help them absorb the sauce better.

Step 3

Step 4

In a bowl, combine 3 Tbsp soy sauce, 1.5 Tbsp sugar, 1 Tbsp gochujang, 1.5 Tbsp gochugaru, 1-2 Tbsp mirin (or cooking wine), and 1/2 Tbsp minced garlic. Whisk everything together until the sauce is smooth and well combined. This is your flavor base!

Step 4

Step 5

Place the prepared squid and 2 Tbsp of olive oil in a wide stir-fry pan.

Step 5

Step 6

Turn the heat to medium and stir-fry the squid until it turns opaque white. Be careful not to overcook, as squid can become tough. Once it turns white, you can turn off the heat temporarily or reduce it to low while you add the vegetables.

Step 6

Step 7

Once the squid has turned white, add all of the prepared sauce to the pan. Return the heat to medium and stir-fry for 1-2 minutes, ensuring the squid is evenly coated with the delicious sauce.

Step 7

Step 8

Add the julienned onion, carrot, and halved Cheonpi-chu to the pan. Stir-fry for another 1-2 minutes, just until the vegetables are tender-crisp and retain a slight bite.

Step 8

Step 9

Toss in the diagonally sliced green onion and Korean chili pepper. Stir-fry briefly just to combine everything, then immediately turn off the heat.

Step 9

Step 10

Drizzle in 1/2 Tbsp of sesame oil for a nutty aroma.

Step 10

Step 11

Sprinkle in a pinch of black pepper and gently toss to combine all the ingredients.

Step 11

Step 12

Finally, garnish with a sprinkle of sesame seeds. Your delicious Spicy Stir-Fried Squid is now ready to be enjoyed! Perfect with rice or as a side dish.
