Spicy Stir-Fried Squid Recipe

Main Ingredients
  • 1 Squid (approx. 150g)
  • 4 cloves Garlic
  • 1 stalk Green Onion
  • 1 Korean Hot Pepper (Cheongyang)
  • 2 Tbsp Cooking Oil (for stir-frying)
  • 1 Tbsp Sesame Oil
  • 0.5 Tbsp Sesame Seeds

Spicy & Sweet Sauce
  • 1 Tbsp Sugar
  • 1.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Mirin (or Rice Wine)
  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Soy Sauce
  • 0.5 Tbsp Cooking Oil (for sauce)
  • 1 Tbsp Gochujang (Korean chili paste)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, clean and prepare the squid. Remove the skin and cut it into bite-sized pieces (about 1.5-2 cm wide). Bring a pot of water to a boil with a pinch of salt, and blanch the squid for about 1 minute. Be careful not to overcook, as it can become tough. Rinse the blanched squid under cold water, drain well, and let it cool slightly.

Step 2

Next, prepare the vegetables. Slice the garlic thinly or mince it. Slice the green onion diagonally. Finely chop the Korean hot pepper to add a spicy kick.

Step 3

In a small bowl, combine all the sauce ingredients: sugar, gochugaru, mirin, minced garlic, soy sauce, 0.5 Tbsp cooking oil, gochujang, and black pepper. Mix them thoroughly with a spoon to create a delicious sauce. Let the sauce sit for a moment to allow the flavors to meld.

Step 4

Add about 2/3 of the prepared sauce to the drained squid and gently mix to marinate. Let the squid marinate for about 10 minutes to absorb the flavors. This marinating step will enhance the overall taste of the stir-fried squid.

Step 5

Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté slowly until fragrant. Once the garlic aroma is released, increase the heat to medium. Be cautious not to burn the garlic by cooking it over high heat.

Step 6

Add the marinated squid to the pan and stir-fry over high heat. The squid will release some moisture as it cooks. Stir-frying over high heat for a short time will keep the squid tender and prevent it from becoming chewy. Continue to stir-fry until the sauce coats the squid well. (If you are using onion, it’s best to stir-fry the onion first until softened before adding the squid).

Step 7

When the squid is almost cooked, add the chopped Korean hot pepper and stir-fry together for about 1 minute until the spicy aroma is released and well combined with the squid. If there’s any remaining sauce, add it now to adjust the seasoning to your preference.

Step 8

Just before turning off the heat, add the diagonally sliced green onion and stir-fry briefly with the residual heat. The crisp texture and fresh aroma of the green onion complement the squid wonderfully. Drizzle in 1 Tbsp of sesame oil for a nutty finish.

Step 9

Finally, sprinkle 0.5 Tbsp of sesame seeds over the dish for garnish and serve. Your delicious stir-fried squid is ready! Enjoy it over warm rice as a squid stir-fry bowl, or pair it with a cold beer for a fantastic appetizer.
