Spicy Stir-fried Squid and Bean Sprouts

Squid, with its wonderfully chewy texture, is a nutritious and flavorful ingredient, isn’t it? Today, I made a steamed dish using one squid and bean sprouts. It’s a spicy, steamed dish that’s perfect for these drizzly monsoon days when energy levels tend to drop. It was absolutely perfect for bringing back my appetite that seemed to have disappeared with the rain! This dish is so captivating that while it’s great as a side dish for rice, it also makes you want to have a drink with it.

Basic Ingredients

  • 2 squids
  • 2 handfuls of bean sprouts (approx. 200g)
  • 1 handful of oyster mushrooms
  • 1/2 stalk of green onion
  • 5cm piece of carrot
  • 1/2 Tbsp minced garlic
  • 1/2 cup water (100ml)
  • Slurry (mix 2 Tbsp water with 1 Tbsp starch)

Seasoning Ingredients

  • 2 Tbsp gochugaru (Korean chili powder)
  • 4 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin)
  • 1 Tbsp sugar
  • 1 Tbsp sesame oil
  • 1/2 Tbsp sesame seeds

Cooking Instructions

Step 1

Prepare 2 squids that have been cleaned. After cleaning, cut them into bite-sized pieces. I removed the skin from the body and scored it in a diamond pattern. A tip for removing squid skin is to use paper towels. They tear easily when wet, so I prefer using wet wipes, which are much more durable and work better for peeling squid skin than paper towels.

Slice 1/2 green onion diagonally, and thinly julienne the 5cm piece of carrot. Prepare 1 handful of oyster mushrooms by tearing them into bite-sized pieces. Also, prepare 2 handfuls of bean sprouts.

Let’s make the seasoning. Combine 2 Tbsp gochugaru, 4 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp sugar, 1 Tbsp sesame oil, and 1/2 Tbsp sesame seeds in a bowl. Mix them thoroughly.

Heat a lightly oiled pan and add the sliced vegetables. Season with 2 pinches of salt and 2 pinches of pepper, then stir-fry evenly until the vegetables begin to soften.

Once the vegetables start to cook, add the bean sprouts. Pour in 1/2 cup of water and cover the pan with a lid. Cook over medium-low heat for about 5 minutes to steam the bean sprouts until tender.

When the bean sprouts are cooked, add 1/2 Tbsp minced garlic. Add the squid and the prepared seasoning sauce, then stir-fry everything together until well combined. Since squid can become tough if overcooked, it’s best to stir-fry it quickly over high heat.

Prepare the starch slurry by mixing 2 Tbsp water with 1 Tbsp starch. Add it gradually to the dish while stirring, until you reach your desired consistency. Adjust the thickness as needed.

Here is the finished Spicy Stir-fried Squid and Bean Sprouts, loaded with chewy squid and crisp bean sprouts! It’s quick to make once you have the squid prepped and the vegetables ready. The spicy seasoning is wonderfully appetizing. The combination of different parts of the squid and the bean sprouts is truly delightful and bursts with flavor in your mouth! It’s a great dish for both a meal and as a snack with drinks.
