Ingredients

  • 3 squids, cleaned
  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 tsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy sauce
  • 1 tsp Sugar
  • 1 tsp Sesame seeds
  • 1 tsp Minced garlic
  • 1/2 Onion
  • 1 handful Cabbage
  • 1 handful Carrot
  • 1 handful Green onion
  • 1 Green chili
  • 1 handful Joraengi tteok (small, round rice cakes)

Today, we’re making spicy stir-fried squid. This dish is a classic for a reason – it’s incredibly flavorful and satisfying!

The squid is already cleaned, so there’s not much preparation needed. Just make sure to remove the small beak-like part in the center. If there’s a transparent membrane on the outside, you can gently peel it off for a smoother texture, or leave it on for a slightly chewier bite.

I’m using three small squids today. Give them a quick rinse under cold water. Then, make diagonal scores across the body of the squid with a knife. These scores help the sauce penetrate better and create a more tender texture when cooked. Cut the squid into bite-sized pieces, about 1 to 1.5 cm wide. Prepare your vegetables by slicing them into similar, manageable sizes.

Scoring the squid helps the delicious sauce really soak in. Cutting the vegetables to a similar size as the squid ensures they all cook evenly. For the green onions, an angled cut looks nice and helps them cook well.

Heat a good amount of cooking oil in a large pan or wok over medium heat. Add the sliced onions, cabbage, and carrots first and stir-fry them until they start to soften and become fragrant. This brings out their natural sweetness.

Once the vegetables are about halfway cooked and slightly translucent, it’s time to add the sauce ingredients. Stir in 2 Tbsp Gochujang, 1 tsp Gochugaru, 1 Tbsp soy sauce, 1 tsp sugar, 1 tsp minced garlic, and 1 tsp sesame seeds. Add the sliced green onions, green chili (if you like it spicier), and the joraengi tteok (if using, make sure they’ve been soaked in warm water if dried).

Now, stir everything together well, making sure the sauce coats all the ingredients evenly. Keep stir-frying, tossing the ingredients to prevent the sauce from burning, until everything is well combined and glossy.

Continue to stir-fry for another 2-3 minutes until the vegetables are just tender-crisp. It’s important not to overcook the squid, as it can become tough. Add the squid when the vegetables are about 70-80% cooked. Stir-fry over high heat for just 1-2 minutes until the squid is opaque and cooked through.

And there you have it! Deliciously spicy and flavorful stir-fried squid, ready to be enjoyed. Serve it hot over a bowl of rice for a satisfying meal, or pair it with your favorite beverage for a fantastic appetizer.
