Multi-Sauce Ingredients

  • 3 Ripe Korean Melons (Chamoe)
  • 200g Radish
  • 3 Cloves Garlic
  • 1 Dried Red Chili (optional, for spice)
  • 4 Small Pieces of Dried Kelp
  • 1/2 Paper Cup Soy Sauce
  • 1 Paper Cup Water

Stir-Fried Korean Green Pepper and Anchovy Ingredients

  • 1 Handful Korean Green Peppers (Kkwari Gochu)
  • 2 Handfuls Medium-sized Anchovies (for broth)
  • 1 Tablespoon Ginger Syrup
  • 1/2 Paper Cup Water

Cooking Instructions

Step 1

First, let’s make the versatile multi-sauce. Wash the Korean melons thoroughly, remove the seeds, and cut them into bite-sized pieces. Peel the radish and cut it into cubes. Peel the garlic cloves and remove the stem from the dried chili. Place the prepared melon, radish, garlic, dried chili, soy sauce (1/2 paper cup), and water (1 paper cup) into a blender and blend until smooth.

Pour the blended mixture into a pot. Add the dried kelp pieces. Simmer over medium-low heat for about 5 minutes to allow the flavors to meld and create a delicious sauce base. Remove the kelp after simmering.

Wash the Korean green peppers under running water and remove the stems. Slice them diagonally about 0.5 cm thick. This preparation helps the sauce penetrate better and makes them easier to eat.

For the anchovies, removing the heads and guts can reduce any bitterness. Place the prepared anchovies in a dry pan and stir-fry over low heat for about 1 minute to remove any fishy smell. It’s important to lightly toast the anchovies until they are slightly crisp.

To the toasted anchovies, add 1 tablespoon of sweet ginger syrup and stir-fry together. The ginger syrup will coat the anchovies, adding a wonderful depth of flavor.

Now, add 1/2 cup of the prepared multi-sauce and 1/2 cup of water to the stir-fried anchovies. Stir well to combine the sauce and bring it to a simmer over medium heat. Adjust the heat as needed.

Finally, add the prepared Korean green peppers. Stir-fry just until the peppers slightly soften. Be careful not to overcook, as this will make them lose their pleasant crispness.
