On a day like today, with the spring rain gently falling since dawn, one might crave some savory pancakes. However, today we’re making a special dish: Kimchi with Pork Belly and Tofu, which might just inspire a delightful afternoon drink. The savory and spicy stir-fried kimchi, paired with soft tofu and rich pork belly, creates a harmonious blend that will surely tantalize your taste buds.

  • 350g Well-Fermented Kimchi

First, prepare the stars of our dish: fresh pork belly and some nicely ripened, well-fermented kimchi. The tangy flavor of the kimchi and the richness of the pork belly will create an exquisite taste together.

Cut the tofu into bite-sized pieces and place them in a pot. Add enough boiling water to cover and gently heat the tofu until warm. When steam starts to rise from the tofu, it will look more appealing and taste delightfully soft. Once warm, immediately drain the water.

Place the pork belly in a preheated pan. Cook over medium heat until both sides are golden brown and slightly crispy. Allowing the pork fat to render sufficiently will enhance the flavor.

Once the pork belly is well-cooked, slice it into bite-sized pieces. Set the sliced pork belly aside on a plate or push it to one side of the pan, as it’s now time to stir-fry the kimchi.

Add the well-fermented kimchi to the pan, using the rendered pork fat. Immediately add the sugar, gochugaru (Korean chili powder), and ginger powder, and stir-fry them together. This step helps to mellow out any excessive sourness from the kimchi and adds a depth of flavor.

Once the kimchi is partially cooked, pour in about half a cup of water. Increase the heat to high and let it simmer until the kimchi becomes soft and tender. Boiling it down like this allows the flavors of the pork belly and the kimchi seasoning to meld deeply, creating a fantastic taste.

When the kimchi is fully cooked and has absorbed the flavors, reduce the heat to low. Drizzle generously with perilla oil for a fragrant finish. Finally, sprinkle a good amount of toasted sesame seeds and a pinch of black pepper to complete this delicious Pork Belly Kimchi with Tofu!
