  • 2 cups well-fermented kimchi
  • 2 Tbsp perilla oil (deulgireum)
  • 1 Tbsp sesame oil
  • 1 Tbsp olive oil
  • 1/2 Tbsp minced garlic
  • 1 Tbsp chopped green onion
  • 1 tsp sesame seeds (kkaesogeum)
  • 1 Tbsp red pepper powder (gochugaru)

Cooking Instructions

Step 1

Gently shake off excess filling from the kimchi, and you can lightly rinse it if preferred. Chop the kimchi into bite-sized pieces (about 2cm wide). Heat a deep pan or pot over medium-low heat, and add the olive oil and perilla oil. Add the prepared kimchi and stir-fry for about 3-4 minutes, stirring constantly to prevent burning. This process removes any raw smell from the kimchi and enhances its flavor.

Once the kimchi has softened slightly, add the minced garlic, chopped green onion, and red pepper powder. Stir well to combine with the kimchi and continue to stir-fry. During this step, the tangy flavor of the kimchi will blend with the spiciness of the red pepper powder, creating a more delicious stir-fried kimchi.

As it cooks, the liquid from the kimchi will reduce. Continue stirring and cooking until the ingredients are well combined and the liquid has mostly evaporated. When it looks like the kimchi is starting to stick slightly to the bottom of the pan, just before turning off the heat, drizzle in the sesame oil for shine and a nutty aroma. Stir for another 1-2 minutes, being careful not to burn it, to finish.
