Spicy Stir-Fried Fish Cakes (Eomuk Bokkeum)

Make the beloved Korean side dish, Eomuk Bokkeum, at home like a pro! This recipe is inspired by Baek Jong-won’s method, making it easier and faster to achieve a deeply savory, spicy, and sweet stir-fried fish cake. It’s perfect as a rice accompaniment or a snack for kids!

Main Ingredients

  • 5-6 sheets of square fish cakes (Eomuk)
  • 1/2 medium onion
  • 1/2 stalk green onion
  • 1 Korean chili pepper (optional)
  • 2 Tbsp grapeseed oil

Cooking Instructions

First, cut the fish cakes into bite-sized pieces (about 2-3 cm wide). Slice the onion thinly, diagonally slice the green onion, and finely chop the Korean chili pepper. If you wish to remove impurities from the fish cakes, you can blanch them briefly in boiling water and then rinse under cold water.

In a small bowl, combine 4 Tbsp soy sauce, 3 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp cooking wine, 1 Tbsp brown sugar, 1 Tbsp sesame oil, a pinch of sesame seeds, and 1/5 cup of water. Mix well to create the sauce. Feel free to adjust the amount of gochugaru to your spice preference.

Heat a pan over medium heat and add 2 Tbsp of grapeseed oil. If you don’t have grapeseed oil, vegetable oil or canola oil can be used.

Once the oil is slightly hot, add the sliced green onions and stir-fry for about 1 minute to release their fragrance, creating ‘green onion oil’. Be careful not to burn them by adjusting the heat.

When the green onion aroma intensifies, add the sliced onion and sauté for 2-3 minutes over medium heat until the onion becomes translucent and tender. Sautéing the onion well enhances its sweetness.

When the onion is about halfway cooked, add the prepared fish cakes and gently toss to combine with the vegetables.

Pour the pre-made sauce evenly over the fish cakes and vegetables.

Stir-fry over medium-low heat for 2-3 minutes, allowing the sauce to coat the fish cakes and vegetables well. Adding 1/5 cup of water at this stage prevents the sauce from burning and helps create a moist Eomuk Bokkeum. The sauce will thicken and cling to the fish cakes as it reduces.

Once the fish cakes have absorbed the sauce, add the chopped Korean chili pepper for a spicy kick and stir quickly. You can omit or adjust the amount of chili pepper to your liking.

Finally, add an additional 2 Tbsp of gochugaru for a richer color and deeper flavor. Stir-fry over medium-low heat, ensuring the sauce thickens to a glossy consistency without burning.

Your glossy and appetizing spicy Eomuk Bokkeum is ready! The subtle heat from the chili pepper and the sharpness of the gochugaru will stimulate your appetite.

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil and sprinkle with sesame seeds. Give it a final mix for an added nutty aroma. Serve your delicious Eomuk Bokkeum and enjoy!
