Main Ingredients

  • 900g Boneless chicken feet
  • 2 handfuls Frozen Cheongyang chili peppers (approx. 20 peppers)

Seasoning Ingredients

  • 3 tsp Chili powder
  • 8-9 tsp Soy sauce
  • 2 tsp Rice wine (Cheongju)
  • 1 tsp Minced garlic
  • 1/2 tsp Ginger powder
  • 2 tsp Rice syrup (Ssal-yeot)
  • 2 tsp Corn syrup (Mul-yeot)
  • 1 tsp Black pepper
  • 3-4 Tbsp Cooking oil
  • 1 tsp Perilla oil (Deulgireum)
  • 1-2 tsp Toasted sesame seeds

Cooking Instructions

Let’s prepare the chicken feet. If your boneless chicken feet are frozen solid from the market, soak them in cold water until completely thawed. Once thawed, rinse them thoroughly under running water multiple times to remove any impurities. Drain them well in a colander. This initial cleaning helps reduce any gamey odor.

We’ll blanch the chicken feet to further clean them and remove any remaining odor. Bring a pot of water to a rolling boil. Add the prepared chicken feet and blanch for about 30 seconds, just a quick swirl. Adding 1 tsp of rice wine (Cheongju) during this step can help with odor control. After blanching, carefully scoop out the chicken feet and rinse them under cold running water two or three times to cool them down. Drain them thoroughly in a colander. This step helps make the chicken feet more plump and tender.

Now, let’s make the delicious seasoning that will define the flavor of our stir-fried chicken feet! In a bowl, combine 3 tsp chili powder, 8-9 tsp soy sauce, 2 tsp rice wine, 1 tsp minced garlic, 1/2 tsp ginger powder, 2 tsp rice syrup, 2 tsp corn syrup, 1 tsp black pepper, and 1 tsp perilla oil. Mix all the ingredients thoroughly until well combined. Perilla oil is crucial for masking any chicken odor and adding a nutty aroma, so be sure to include it. Whisk everything together to create your flavorful seasoning paste.

Add the prepared seasoning paste to the drained chicken feet. Use your hands to gently mix and coat the chicken feet thoroughly, ensuring every piece is covered in the delicious sauce. For best results, let it marinate for about 10 minutes, allowing the flavors to penetrate the chicken feet.

Heat 2-3 Tbsp of cooking oil in a pan over medium-high heat. Add the marinated chicken feet and stir-fry rapidly for about 3 minutes. Once the chicken feet are slightly cooked, reduce the heat to medium-low. Continue to stir-fry for another 5-7 minutes, or until the chicken feet are fully cooked and the sauce has thickened slightly. Stir frequently to prevent sticking and burning. If you prefer a saltier taste, you can add a bit more soy sauce at this stage to adjust the seasoning to your preference. (This recipe was written with a preference for less salt.)
