Main Ingredients
- 1 handful of small dried anchovies (about 30g)
- 1 Cheongyang pepper (a type of Korean chili pepper)
- A small amount of green onion, chopped

Cooking Instructions
Step 1
First, prepare the vegetables that will bring out the flavor of the spicy anchovy fried rice. Remove the stem from the Cheongyang pepper, shake out the seeds, and then mince it very finely. If you like it spicier, you can leave some of the seeds in. Chop the white and green parts of the green onion into small pieces.
Step 2
Heat a generous amount of cooking oil in a pan over low heat. Once the oil is slightly warm, add 1/2 tablespoon of fine gochugaru and stir-fry until fragrant, being careful not to burn it. Burnt gochugaru can taste bitter, so always stir-fry on low heat.
Step 3
Once the gochugaru is fragrant, add the prepared small dried anchovies and stir-fry together. It’s best to fry the anchovies sufficiently to remove any fishy smell and enhance their nutty flavor. Next, add the minced Cheongyang pepper and chopped green onion, and stir-fry.
Step 4
Stir-fry over high heat for about 1-2 minutes until the ingredients are well combined, the anchovies are lightly golden, and the aroma of the vegetables is released. This quick stir-fry ensures everything cooks evenly.
Step 5
Now it’s time to add the rice. Add warm cooked rice and break up any clumps with your spatula. Stir-fry until the rice is evenly mixed with the anchovies and vegetables. Add oyster sauce to your liking for seasoning and extra umami. Make sure to stir-fry thoroughly so each grain of rice is coated with the sauce.
