Spicy Squid Tentacle Stir-Fried Noodles (Opa Ramen)

Don’t throw away those leftover squid tentacles after eating the body! Add a spicy and sweet scallion oil sauce, stir-fry them with ramen noodles, and you’ll have a delicious meal or a special snack called ‘Opa Ramen’. Experience a rich flavor by using up your ingredients!

Main Ingredients

  • 1 serving Ramen noodles
  • 1 portion Squid tentacles
  • A little red chili (for garnish)
  • A little green chili (for garnish)
  • A little seasoned seaweed (for garnish)

Scallion Oil Sauce

  • 2 Tbsp Gochugaru (Korean chili powder)
  • 1/2 tsp Vinegar
  • Pinch of black pepper
  • 1 Tbsp Soy sauce (Jinganjang)
  • 1 Tbsp Oligodang (corn syrup)
  • 6 cm piece of Scallion (white part)
  • 1 Green chili pepper
  • 3 Tbsp Cooking oil
  • 1 Tbsp Cooking wine (Mirin/Masul)
  • 50 ml Water

Stir-fried Bean Sprouts

  • 150g Bean sprouts
  • 1 Tbsp Oyster sauce

Cooking Instructions

Step 1

First, prepare the ramen noodles. Boil 1 serving of ramen noodles in water, cooking only about 1/3 of the way. If cooked too long, the noodles can become mushy when stir-fried. Once par-cooked, rinse the noodles under cold water, drain them well, and set aside on a colander.

Wash the scallions thoroughly and thinly slice the white parts. These will play a key role in creating the fragrant scallion oil.

Remove the stems from the green chili peppers and thinly slice them. This will add a spicy kick.

Wash the red and green chili peppers, remove the seeds, and slice them diagonally into bite-sized pieces. These will be used as a garnish to add color to the dish.

Clean the squid tentacles (or octopus tentacles) and cut them into bite-sized pieces. Cutting them into manageable lengths will make them easier to stir-fry and eat.

In a separate pan, add 150g of cleaned bean sprouts and 1 Tbsp of oyster sauce. Stir-fry over high heat quickly. The key here is to maintain the crispiness of the bean sprouts, and the oyster sauce adds a savory depth.

In a small bowl, combine all the ingredients for the scallion oil sauce: 2 Tbsp gochugaru, 1/2 tsp vinegar, a pinch of black pepper, 1 Tbsp soy sauce, and 1 Tbsp oligodang. Mix well to create the sauce.

Place the thinly sliced scallions and green chili peppers from step 2 on top of the sauce mixture made in step 6. This allows the flavors of the scallions and chilies to infuse into the sauce.

Heat 3 Tbsp of cooking oil in a pan over medium heat. Once the oil is hot, add the sauce mixture with scallions and chilies from step 7. Stir-fry until fragrant, almost like frying, to extract the rich aroma of the scallion oil. This process significantly deepens the flavor of the scallion oil.

Reduce the heat to low. Add the prepared scallion oil sauce and the cut squid tentacles to the pan. Stir in 1 Tbsp of cooking wine and 50 ml of water. Cook over medium heat until the squid is cooked through. If the sauce becomes too thick, add a little more water to reach your desired consistency. Be careful not to overcook the squid, as it can become tough.

Once the squid and sauce are well combined in step 9, add the par-cooked ramen noodles. Stir-fry everything together, ensuring the noodles are evenly coated with the sauce. Gently toss to combine.

Transfer the finished Opa Ramen to a serving bowl. Add the stir-fried bean sprouts from step 5 on the side. Finally, garnish with the sliced red and green chilies from step 3 and crumbled seasoned seaweed. For an extra smoky flavor, you can briefly char the chilies and seaweed with a kitchen torch before serving. Enjoy your delicious Opa Ramen!
