Cooking Instructions

Step 1

Welcome! Today, we’re going to make a squid and radish soup that’s wonderfully refreshing and has a delightful spicy kick. This recipe is so easy, anyone can make it at home, so let’s get started step-by-step!

Step 2

First, let’s prepare the Korean radish, which gives this soup its refreshing taste. Wash the quarter radish thoroughly and slice it thinly into bite-sized pieces, about 0.5cm thick. This allows it to absorb the soup’s flavor beautifully.

Step 3

Next, we’ll prepare the squid. After cleaning it well, remove the ink sac and cartilage. Then, cut the squid into manageable pieces, about 2-3cm long. Cutting the tentacles along with the body makes for a more satisfying soup.

Step 4

Now, let’s season the broth. Pour 600ml of your prepared broth into a pot. Add 1 tsp of soy sauce for soup, 1 tsp of minced garlic, and 2 tsp of gochugaru. Taste the broth and add a tiny pinch of salt if needed to adjust the seasoning to your preference. Once seasoned, add the sliced radish to the pot.

Step 5

To add depth and a pleasant spiciness, stir in 1 tsp of gochujang. Make sure to dissolve it thoroughly to avoid clumps. Adding gochujang will also give the soup a wonderfully rich color.

Step 6

Finally, let’s add the green onions for a fresh aroma. Toss in the chopped green onions and let them simmer in the soup. The fresh flavor of the green onions will meld with the broth, creating an even more complex and delicious taste.

Step 7

With all the ingredients in, bring the soup to a rolling boil over high heat, and then delicious squid and radish soup will be ready! Once boiling, reduce the heat to medium and simmer for about 5-7 minutes, or until the radish becomes translucent. Enjoy your hearty, delicious squid and radish soup with a warm bowl of rice!
